One of my favorite sandwiches to eat is chicken salad sandwiches. When ever I decide I need to give up bread, white bread gives me headaches or because I want to eat less processed carbs, it is the one thing that I miss the most. Of course I could eat chicken salad without the bread, but it just isn’t the same. You know how certain foods just HAVE to be a sandwich and it just can not be substituted.
If you are like me and can handle giving up the bread completely for health reasons, there is another choice. Arnold Bread offers Arnold® Sandwich Thins® Rolls. I used the Arnold® Sandwich Thins® Rolls when we made our Chicken Salad for dinner the other night. It worked out perfectly and the kids enjoyed them too. They loved how thin they are so that they didn’t feel like they we just eating a mouthful of bread.
Chicken Salad Recipe
- 2 cups of cooked chicken breast, diced
- 1 1/2 cup of mayonnaise
- 1/4 cup of dijon mustard
- 1/2 green bell pepper, diced
- 1/2 orange bell pepper, diced
- 3 dill pickles, diced
If you want your chicken to be very moist, boil it for this recipe. Start with bone in chicken breasts with the skin on. Boil them until there is no pink left. The time changes depending on the size of your chicken. This is a trick I learned when I was serving at a restaurant. Once it is cooled, remove the skin, pull off the meat and dice it up. I prefer larger pieces, but this is up to you.
Add the chicken, the peppers and the pickle in a bowl. Add in the mayonnaise and mustard. Stir it all together.
Serve on Arnold® Sandwich Thins® Rolls or Arnold® Whole Grain Sliced Breads.
