Ahh the summer is almost over and already the idea of back to school is on everyone’s mind. I can not believe that the summer went so fast. But with back to school comes back to school lunch ideas. Easy Lunch Idea for Kids
When it comes to having a healthy lunch idea that kids will actually love, it can be challenging. I have some kids who will eat anything. I have some kids who are so picky. Trying to find something that everyone will love is tough. Because my kids are fussy, they like to pack lunch because they never like the school lunch ideas. So here is one of my favorite easy lunch idea for kids.
This is one of Willow’s favorite lunches, while she likes to eat, eats only small amounts at a shot, hence the smaller lunch.
Healthy Lunch For Kids
When you are making this lunch, you will want to heat up the chicken nuggets beforehand, and put them in the refrigerator. This keeps them from getting soggy.
How to make animal and flower shaped cheese
I found these adorable mini cookie cutters at a craft store last year and I have had so much fun with them ever since. It turns any ordinary food into a fun animal or flower. You’re instantly half-way closer to your kids eating whatever it is.
I sliced some cheddar and muenster cheese into slices and cut out my shapes. For the center of the flower, I used a straw to make a tiny circle of cheddar cheese.
I also used the mini cookie cutters to cut the chicken nuggets into cute animal shapes. My kids love chicken nuggets, but now I am sure they will love the animal shaped chicken nuggets even more.
Homemade Baked Kale Chips Recipe
Ingredients:
2 cups trimmed and cut kale
1 tsp olive oil
1/8 tsp sea salt
Pepper to taste
I always line my baking pans with either parchment paper or a silicone baking liner. It makes clean up a breeze and I don’t have to worry about things sticking. Also, did you know that you can get groceries from Amazon Market? For me, that is a life saver because I HATE dragging the kids to the store with me. It is also a great way to stay on budget because I am not getting side tracked because I don’t see all the other foods in front of me. SCORE!
How to Make this Easy Bento Box Lunch for Kids
Preheat the oven to 350 degrees F.
Trim the stems off the kale and cut the leaves into 1”-2” pieces. I used a bag of pre-cut kale. I still had to trim some stems and make sure my pieces were about the right size.
Drizzle the olive oil onto the kale. Start with 1 tsp and then add another tsp if necessary. It’s very important not to add too much olive oil, or your “chips” will be chewy and soggy.
Sprinkle the kale with salt and pepper. I think it needs a lot of salt, but I like salt.
Place a piece of parchment paper on a baking sheet. Spread the kale into one layer on the baking sheet. Don’t overlap the kale.
Cook the kale for 8-10 minutes. It is VERY easy to burn kale chips. Check in at 8 minutes, and every 30 seconds after. Cook until the edges are very slightly starting to brown.
If you overcook the kale chips, they turn super crumbly and are not a very fun snack.
