– Baby gold potatoes Campari tomatoes zucchini baby carrots garlic Olive oil – Dried oregano – Dried thyme Salt and pepper Parmesan cheese Crushed red pepper

Preheat the oven to 425 degrees F. Place the veggies, and garlic in a large mixing bowl. Drizzle with olive oil Add the dried oregano, thyme, salt and pepper.

Add the potatoes, and vegetables, spread them out on a foil covered baking pan. Roast in heated oven for 30 minutes. Serve with a sprinkle of freshly grated Parmesan cheese and fresh parsley.
