1cupfat free shredded Mexican blend or cheddar cheese
2tablespoonsI Can’t Believe It’s Not ButterMelted
Directions
In a large skillet, cook sausage until it's is no longer pink. Drain. Add garlic and cook until soft. Season with onion powder, salt, and pepper.
In a bowl, whisk eggs and pour into the skillet and cook until eggs are scrambled. Remove skillet from stovetop. Add mixture to a bowl and set aside.
Add tortillas to the microwave for 20 seconds. This softens them and makes it easier to roll them. On a flat surface, top a tortilla with 2 tablespoons of the skillet mixture. Top with a sprinkle of cheese. Roll tortilla tightly and place in the baking dish. Brush with melted butter. Repeat until remaining tortillas are filled.
Pre-heat Air Fryer to 350° for 1 minute. Bake for 3 minutes and turn, and bake for an additional 2-3 minutes or until tortillas are golden brown and crispy.
