TO COOK THE SNAPPER
Snappers have a very distinct line of bones that go from the center to the edge of the fillet. If you make a small slit on both sides of the fish, you can easily remove the whole line at once. They are very easy to remove. You will need to leave the skin on since it's such a thin fillet.
Season both sides of the fillet thoroughly. You can pat the seasoning into the fish if you'd like.
In a large skillet, heat the olive oil and place the snapper into the heated skillet. Cook for approximately 3 to 5 minutes per side. Check the doneness of the fillet by taking a fork to the meat. If it's flakey and opaque looking it's done.
Remove the skillet from the heat. Arrange one or two of the fillets onto a plate and top with the salsa. Serve up with an a couple of slices of lime.
