Heat the olive oil on medium high heat in a large skillet. Season chicken with salt and pepper. Add chicken to the pan and cook for 4-5 minutes, or until golden brown. Turn over and repeat. Remove the chicken, place it on a bowl and set it aside.
Reduce heat to medium and add the remaining olive oil. Add the mushrooms and cook 4-5 minutes. Add in the garlic, salt, pepper and oregano.
Add in the broth and scrape up any brown bits from the pan.
Slowly mix in the heavy whipping cream and bring to a bubble. Add in the gnocchi.
Return the chicken to the pan and cook for 10-12 minutes, or until the chicken is cooked through and no pink is showing. Remove the chicken from the pan and set aside.
Stir in the cheeses.
Add the spinach and cover the pan. Allow the spinach to just begin to wilt.
Slice the chicken and return to the pan. Serve immediately.
