Trim the stems off the kale and cut the leaves into 1”-2” pieces. I used a bag of pre-cut kale. I still had to trim some stems and make sure my pieces were about the right size.
Drizzle the olive oil onto the kale. Start with 1 tsp and then add another tsp if necessary. It’s very important not to add too much olive oil, or your “chips” will be chewy and soggy.
Sprinkle the kale with salt and pepper. I think it needs a lot of salt, but I like salt.
Place a piece of parchment paper on a baking sheet. Spread the kale into one layer on the baking sheet. Don’t overlap the kale.

Cook the kale for 8-10 minutes. It is VERY easy to burn kale chips. Check in at 8 minutes, and every 30 seconds after. Cook until the edges are very slightly starting to brown.
If you overcook the kale chips, they turn super crumbly and are not a very fun snack.
