Prepare all ingredients in advance of cooking. Make the sausage burger patties and put them in the oven while you make the mushroom gravy. You should have time to make the gravy before you need to sear the patties. This will require a bit of juggling but the time you save is worth it.
Sausage Burgers:
Mix the sausage and hamburger with the dry spices until evenly mixed and form into patties. This should make 6 to 8 patties.
Grease one or two 9x13 pans with vegetable shortening and place the patties evenly spaced in them. Cover with aluminum foil and bake at 350 F for 40 minutes or until 160 F internal temperature is reached.
When the patties are done, remove them to a plate and sear them in a frypan with a little oil to give them that char that happens on the grill.
Keto Gravy:
Melt 2 Tbl of butter in a large sauce pan. Add the mushrooms and onions and saute them until their volume is reduced by 1/2 to 2/3. This takes 5 to 10 minutes so be patient, but the flavor intensification is what makes this recipe so good.
While the mushrooms are reducing, stir the beef broth, xanthan gum , and Worcestershire sauce in a small mixing bowl until evenly mixed. Remember to give this mixture a good stir just before adding it to the pan in the step below.
When the mushrooms have reduced, add 1/2 cup of beef broth to the pan and bring them to a boil for 2 minutes. This step drives the flavor into the mushrooms and makes them yummy!
When the mushrooms are done, add the beef broth-xanthum gun-Worcestershire mixture to the pan and bring everything to a boil while stirring constantly.
When the gravy has thickened to the point it will coat the back of a spoon, taste it and add salt and pepper a little at a time until the gravy tastes perfect. Remove it from the heat and serve over the burgers.
