Before you start, you want to make sure the yeast is not expired. When yeast is past its date, it will not rise correctly.
Combine together 3/4 cup flour with the sugar, dry yeast. and salt in a bowl. Mix it together well.
In another bowl, mix together the milk, water, and butter. Microwave on high at 15-second increment. You want to have the milk mixture reach 120 - 130 degrees. It is best to use a thermometer to check the temperature of the milk mixture. If you do not have a thermometer, the water should be warm but not too hot to touch. If the milk mixture is too hot, it will kill the yeast. The mixture will be warm and the butter will not be melted all the way.
Add to flour mixture.
Beat the flour and milk mixture together for 2 minutes. Scrape down the bowl occasionally.
Add 1/4 cup flour and beat 2 minutes at high speed.
Stir in just enough of the remaining flour (1 to 1-1/4 cups) so that the dough will form into a ball.
On a lightly floured surface, knead the dough for about 6 to 8 minutes until the dough is smooth and elastic. The dough will spring back when lightly pressed in with 2 fingers.
Cover with a towel and let rest for 10 minutes.
When the dough is done resting, cut the dough into 12 equal pieces. Place in a greased 8 inch round or square pan.
Place the pan in a warm place and let the dough double in size, for about 3o minutes.
Preheat the oven to 375 and bake for 20 minutes or until the rolls are golden brown.
Run a knife along the edges of the rolls, and remove from the pan. Brush with the cinnamon butter.
Serve the rolls warm.
Any leftovers need to be stored in an airtight container or freezer bag.
