Our Chocolate Peanut Butter Bundt Cake is what dreams are made of. Imagine a rich and decadent Bundt cake full of rich chocolate and dreamy peanut butter fluff. Then imagine that delicious cake being drizzled in peanut butter. This cake combines the best of peanut butter and chocolate and creates a cake that is simply pure perfection.
Prepare the Bundt pan by using a paper towel to thoroughly coat the inside of the pan with butter. You can use a non-stick cooking spray too but butter or solid shortening works so much butter . Make sure to get every single nook and cranny or the cake WILL STICK. Then FLOUR the pan and make sure all of the shortening or butter is covered.
Whisk the flour, cocoa, baking soda, baking powder and slat together in a medium-sized bowl and set aside.
In a mixing bowl, beat the butter and sugar until it's light and fluffy. This will take anywhere from 2 - 3 minutes. Depending on your mixer it could be up to 5 minutes. Your goal is for the mixture to be very fluffy. If it feels like wet sand, it needs to mix longer.
Slowly incorporate the eggs, one at a time, and mix well after each egg is added.
After the eggs are added, add in the vanilla bean paste.
Now, before proceeding, LOWER THE SPEED ON YOUR MIXER and add in the flour mixture and the milk. Start with the flour mixture and make sure to end with the flour mixture. Mix until the ingredients ARE JUST MIXED. Do not overmix.
In your Bundt pan, add in half of the cake batter. Then add in the peanut butter fluff filling. Then add in the remaining batter on top. Bake for 45 - 50 minutes or until a toothpick comes out clean.
The key to removing a Bundt cake is to let it cool for a short time in the pan, approximately 10 minutes. Then put a wire rack on top of the pan and invert the pan. Allowing the cake to release on it's own. Then let the cake finish cooling.
Directions for the Peanut Butter Fluff Filling
In a medium sized bowl, add in the cream cheese and the egg. Using a mixer, beat the two ingredients together until the mixture is light and fluffy.
Next, add in the heavy cream and mix into the other ingredients until it's smooth.
Then lower the speed on the mixer to low and add in the peanut butter and mix until thoroughly combined.
Then while still on low, mix in your mix in your powdered sugar about 1 tablespoon at a time, until your mixture is light and fluffy.
Directions for the Chocolate Ganache Drizzle
In a microwave-safe bowl, heat the chocolate chips and butter at 30 second bursts. Make sure to stir after each rotation until the chocolate is smooth and melted.
Then slowly mix in the cream until nice and smooth. Drizzle over cake. If you like, melt the peanut butter in the microwave as you did the chocolate. Drizzle over the cake as you did the chocolate ganache. This step is optional, but it sure does add some flair and flavor/
