Directions
Preheat oven to 350 degrees. Spray muffins tins with Pam or another baking spray. You can also use cupcake papers.
In a bowl beat together sugar and egg until light in color. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
Pour into the egg mixture and stir together. Add applesauce, milk, and vanilla and stir together.
Fill muffin tins to 3/4 full.
Bake for 35 minutes. Muffins will still be slightly soft on the inside. You can bake longer if desired.
Topping
Melt butter. Mix together sweetener, cinnamon and butter.
Brush lightly over the top of muffins.
