Oatmeal Raisin Cookies

Ingredients
- 1 cup unsalted butter softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3½ cups quick oats
- 1 cup all-purpose flour
- 1 teaspoon pumpkin pie spice
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup raisins
Directions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Cream butter and sugars together in a mixing bowl until fluffy.
- Add eggs and vanilla extract and mix until combined.
- In a separate bowl, mix flour, spice, baking powder, baking soda, and salt.
- Add dry ingredients to the wet ingredients and mix until combined.
- Stir in oats and raisins.
- Cover dough and chill for 30 minutes.
- Roll dough into 24 balls and place on the baking sheet.
- Flatten gently with the bottom of a glass.
- Bake for 8–10 minutes until golden brown.
- Cool on a wire rack before serving.
