Short Cut Gluten-Free Coffee Cake Muffins

Ingredients

cups
Krusteaz Gluten Free pancake mix
If you are using regular pancake mix, you want the mix that just needs water.
1/4
cup
sugar
1/2
cup
water
1
egg
You do not need this is you are using regular pancake mix
1/2
cup
sour cream
1/2
teaspoon
vanilla extract
1/2
cup
chocolate chips
optional
For topping:
1/2
cup
brown sugar
1/2
teaspoon
ground cinnamon
Directions
Preheat oven to 375 F degrees. Line a muffin pan.
Combine the mix, sugar, egg and sour cream in a bowl. Then add water and vanilla. Mix until it is combined but there will be small lumps.
Fold in the chocolate chips
Gluten Free Coffee Cake muffins using pancake mix
Spoon into the muffin liners about half way.
Combine the topping and sprinkle over the top of each muffin.
Bake 23-27 minutes until golden brown.
Remove from the pan and let cool on a cooling rack.
