My kids are starting back to school in a few weeks. That means I will be trading long summer days for busy afternoons with homework and after school activities. That also means I need ideas for back to school lunches. There are sandwiches, and we heat up chicken nuggets. We use a thermos for leftover rice or soup. I like to try to use left overs from dinner as lunch because it is simple and easy.
My family loves tacos. We eat them often. Sometimes we make them as chicken tacos. When we do, I like to make chicken taco quesadillas for lunch. It is something that tastes great and it easy to make. I pack the chicken taco quesadilla with some fruit and something for dessert and the kids can’t wait to take their lunch for school. My secret to an award winning lunch besides my chicken taco quesadillas? Twinkies of course!

So back to making lunch. Making Chicken Taco Quesadillas is simple.
Chicken Taco Quesadilla
Ingredients:
Shredded Chicken
Taco Seasoning
2 Tortillas per quesadilla
Mexican cheese
Butter
Directions:
You can cook up any type of chicken or use rotisserie chicken. We like to use the rotisserie chicken because it saves time.
Heat the shredded chicken in a skillet. Add your taco seasoning with about 3 tablespoons of water.
Once the chicken heated through and the water has evaporated, set it aside.
In another skillet, add a small amount of butter to coat the bottom of the pan.
Lay a tortilla down.
Layer cheese, then chicken, then cheese and another tortilla.
Brown each side.
Cut into 4 and pack with lunch.
These work great to make the day before and eat them cold.
