My family loves pasta. We eat it several times a week. It is versatile, budget-friendly, makes a great under 30-minute meal, and it is always on hand. These are the things that I look for in a pasta dish. Spaghetti Carbonara fits all of this. Many people have never had Spaghetti Carbonara. When people think of pasta dishes, there are several types of sauces that come to mind: red sauce, alfredo sauce, pesto sauce or cheddar cheese sauce. While Spaghetti Carbonara has cheese in it, it is not a cheese sauce in the classic sense.

Spaghetti alla carbonara has only a few ingredients, which helps make this dish simple. The most time-consuming ingredient in the spaghetti alla carbonara is the bacon. Once the bacon is done and the noodles are cooked, this easy pasta dish comes together in no time.

Spaghetti Carbonara Recipe
Ingredients:
1lb spaghetti
1/2 package of bacon
3 cloves freshly chopped garlic
4 eggs
1 cup Parmigiano-Reggiano
salt, pepper, and parsley
Directions:
Cook the spaghetti according to the directions. When the pasta is al dente, save the pasta water.
While the spaghetti is cooking, cook the bacon crispy. When the bacon is done, remove it from the pan, and pour out most of the grease, leaving about a tablespoon in the pan.
In the same pan, saute the garlic.
In a bowl, add the eggs and whisk with a fork.
Add the pasta to the sauteed garlic. Add the bacon back in.
Add the eggs. Stir the eggs into the pasta quickly, being sure they do not scramble. You want the eggs to cook, and coat the pasta, but not to scramble. As the dish start to cook, remove the pan from the heat. The heat from the pan and the pasta will continue to cook the eggs.
Add the cheese and continue to stir. If the pasta is a bit too dry, add some of the pasta water in. Top with parsley.

I made this for dinner tonight (didn’t get to do it last week), and man, was it good! The whole family enjoyed it, including The Pickiest Sixteen-Year-Old Ever! He doesn’t like cheese, but didn’t seem to notice all the parmesan in the sauce. Hehe. Thank you for an easy and awesome recipe that we WILL be making again…and again…and again!

I doubled the recipe when I made it, so we had left overs, and it sat for a few days. So it was a bit dry, we added just a tiny bit of leftover sauce that wasn’t enough for anything else, but was perfect to add to this, even a little chicken stock would have worked just to loosen things up. Got another night out of it.
