Saute the onions and mushrooms in the Instant Pot. Then remove from the pot.
Brown the chicken in small batches. Remove the chicken.
Add the mushrooms and onions back into the pot. Add seasonings and broth.
Place the trivet back into the pot and add the chicken.
Pressure cook for 10 minutes and do a 10-minute natural release. Finish with a quick release.
Remove the chicken, and add the goat cheese to create the sauce.
Serve.
Hint: Goat cheese adds a nice creaminess to the sauce, but you can substitute it with ricotta or cream cheese if desired. Heavy cream or half n half can be used as well for a creamy Italian chicken.
🥄 Variations
- If you don’t have fresh thyme or rosemary, you can substitute dried herbs. Just be sure to reduce the amount used by half.
- If you like a kick, add some red pepper flakes.
- Top with freshly grated parmesan cheese

Refrigerator Storage: Store in an airtight container in the refrigerator for up to 4 days.
Freezer Storage: You can store fully cooked chicken in a freezer-safe container or bag for up to three months. To thaw, simply place frozen chicken in the refrigerator overnight.
Reheat: Reheat in the microwave for 2-3 minutes or until heated through. Or, warm up on the stovetop over medium heat.

Instant Pot Italian Chicken
Ingredients
- 1 Tbsp. extra virgin olive oil divided
- ½ medium red onion diced
- 8 oz. baby Portobello mushrooms cleaned and sliced thin
- 24 oz. boneless skinless chicken breasts pounded to ¼” thick, 4 pieces
- Sea salt and black pepper to taste
- 1 cup chicken broth
- 1 tsp garlic powder
- 2 Tbsp fresh thyme leaves
- 2 Tbsp fresh rosemary leaves chopped
- 4 sprigs fresh rosemary
- 4 oz. reduced fat goat cheese chunks cut into
- 3 Tbsp fresh parsley chopped
Directions
- Add one teaspoon of olive oil to Instant Pot® and select the Sauté function. Set to high and once the display reads “hot,” add red onion and Portobello mushrooms. Cook, frequently stirring until onions soften and mushrooms start to release their liquid, approximately 5-6 minutes. Transfer veggies to a bowl and set aside.
- Add another teaspoon of olive oil to unit and season chicken breasts with salt and black pepper on both sides. Working in batches, if necessary, add chicken to the Instant Pot® without overcrowding. Brown on both sides, approximately 2-3 minutes per side.
- Remove browned chicken from the unit and repeat the process with the remaining olive oil and chicken breasts, as needed.
- Return mushrooms and onions to Instant Pot® and add chicken broth, garlic powder, thyme, and rosemary. Stir to combine.
- Place the metal trivet that comes with the Instant Pot® into the cooking container. Place chicken breasts on top of the trivet and cover. Lock the lid and set the pressure valve to “Sealing.” Press the “Manual” button and adjust the setting to “high.” Set cook time to 10 minutes.
- When cook time is finished, allow pressure to release naturally for 10 minutes, and then do a quick release for any remaining pressure. Turn the unit off and remove the lid. Transfer chicken to a serving platter and rest for 5 minutes.
- Add the goat cheese to the cooking liquid and stir to combine. Taste and adjust seasonings, as desired.
- Serve immediately with some of the mushroom sauce spooned over each chicken breast. Enjoy!
