These chicken fajitas wraps are made with juicy, flavorful chicken, tender peppers, and onions, and topped with your favorite fajita toppings. These wraps are perfect for a simple, healthy lunch or dinner. Using lettuce wraps instead of tortillas, makes this a low point, low carb meal you can enjoy guilt free.
Heat the oil in a large skillet over medium heat. Add the bell peppers, red onion, and balsamic vinegar to the skillet. Season well with salt and pepper. Cook for 10-12 minutes or until the veggies are crisp tender.
Add the shredded chicken, fajita seasoning, and chicken stock to the skillet and stir to combine. Cook until hot and excess liquid is gone, approximately 3-4 minutes. Season with additional salt or fajita seasoning, if needed.
Remove the skillet from the heat and add in the cilantro, green onions, and fresh lime juice.
To serve, spoon mixture onto individual Romaine lettuce leaves and top with a drizzle of cilantro lime sauce. Enjoy!
