What’s healthier tacos or fajitas?
Tacos and fajitas are both essentially healthy. Beef will have more fat and calories than chicken will, so if you are looking for something lower in calories and points, you want to make chicken tacos or chicken fajitas. Besides that, both meals are about equal in which one is healthier.

Enchiladas are made with corn tortillas, while fajitas are traditionally made with flour tortillas. Next, Enchiladas are usually rolled and filled, while fajitas are more like tacos, with the fillings placed on top of the tortilla. Enchiladas are often covered in sauce, while fajitas are not.
How much is in a fajita seasoning packet?
A fajita seasoning packet usually contains about 2 tablespoons of seasoning. For this recipe, you will need a total of 4 tablespoons that are divided between the fajitas and the sauce. I like to keep it simple and serve them with rice, black beans, and a side salad. For a heartier meal, add some rice and homemade refried beans to the mix. You could also serve them with quinoa, roasted potatoes, or sweet potato fries.
What is the best cheese to use on chicken fajitas wraps?
Cheese is a very popular topping for chicken fajitas. Sometimes I add it, sometimes I do not. If you want to add cheese to this wrap, I would recommend using a grated cheese like shredded cheddar cheese or Monterey jack. I also love to use pepper jack because I like the kick. If you are trying to keep this low in points, remember to use fat-free cheese or low-fat cheese.
You want to avoid using strongly flavored cheese because it can overwhelm the flavor of the chicken and veggies.
Is Cajun seasoning the same as fajita?

I am using rotisserie chicken. It saves so much time. You can use chicken breast or chicken thighs that you bake or grill at home. Cooking the chicken in the slow cooker to make crockpot chicken fajitas is also an option. Once cooked, you can slice the chicken or shred it, whichever version you prefer.

Bell peppers and onions are the most used vegetables when making fajitas, you can add in others. I love to add mushrooms, zucchini, and corn to the mix. I like to use romaine lettuce for making these wraps. The leaves are the perfect size for filling and it wraps around the filling almost automatically. You can also use butter lettuce or bib lettuce. If you are using larger lettuce, such as iceberg, I recommend chopping it into smaller pieces so it is easier to work with.
You can use other things too. I have also used radicchio, cabbage, and even spinach leaves. If you are using a hardier green, I recommend chopping it into smaller pieces so it is easier to work with.
Do you use flour or corn tortillas for fajitas?
Fajitas are normally served with flour tortillas. Flour tortillas are soft, and they have a tendency to be larger than corn tortillas. They’re also more flexible, which makes them ideal for wrapping around fillings.
How do you prepare tortillas for fajitas?
Typically, tortillas are warmed before they are used for fajitas. This not only makes them more pliable but also brings out their flavor. One popular way to warm tortillas is to place them on a hot griddle or skillet for about 10 seconds per side.

How to store
To store, place the chicken fajitas in an airtight container and place in the fridge for 3-4 days or freezer for 2-3 months.
For best results, do not store the chicken and veggies in tortillas or lettuce wraps. Make the wrap when you are ready to serve. Storing the filling inside of the wrap, no matter what kind of wrap you choose will leave a soggy mess that will not taste good.
How to reheat
To reheat, you can use the microwave or stovetop. If using the stovetop, add a little chicken broth to the pan to keep the chicken moist. Reheat until the chicken is cooked through.
Can I make this ahead of time?
You can absolutely make this ahead of time! I love to meal prep these on Sundays. I will make a big batch and we have them throughout the week for lunch or dinner. To do this, simply cook the chicken and vegetables. Once they are cooled, store them in an airtight container in the fridge for up to 3 days. When you are ready to eat, simply reheat and enjoy.

How to make Chicken Fajita Lettuce Wraps
Heat the oil in a large skillet over medium heat. Add the bell peppers, red onion, and balsamic vinegar to the skillet. Season well with salt and pepper. Cook for 10-12 minutes or until the veggies are crisp tender.
Add the shredded chicken, fajita seasoning, and chicken stock to the skillet and stir to combine. Cook until hot and excess liquid is gone, approximately 3-4 minutes. Season with additional salt or fajita seasoning, if needed.
Remove the skillet from the heat and add in the cilantro, green onions, and fresh lime juice.
To serve, spoon mixture onto individual Romaine lettuce leaves and top with a drizzle of cilantro lime sauce. Enjoy!

- 1 green bell pepper sliced thin
- 1 yellow bell pepper sliced thin

- 3 green onions green parts only, sliced
