This Pineapple Beef Stir Fry recipe is an amazing dinner recipe. Inexpensive and fast, this makes a perfect weeknight dinner or make it for guests. Serve with rice or cauliflower rice and stir fry vegetables.
1lb.beef flank steakthinly sliced against the grain
2½c.pineapple chunks
3T.soy sauce
3scallionssliced thin
Salt and pepperto taste
Directions
Heat 1-2 tablespoons oil in a large skillet or wok over high heat. Add the sliced beef and pineapple and season with a small pinch of salt and pepper, if desired.
Stir-fry the beef and pineapple over high heat until the beef is cooked through and the pineapple develops a slight golden color, approximately 2-3 minutes.
Add the soy sauce and stir-fry for another 1-2 minutes, or just until the mixture is warm and bubbly. Taste and season with additional salt and black pepper, if desired. This will create your stir fry sauce.
Remove from heat and stir in the scallions. Transfer to individual plates and serve immediately.
