    McDonald’s serves roughly 68 million customers every single day across more than 40,000 locations worldwide. That’s a staggering number of meals, and with them comes a vast workforce of people who know exactly what goes on behind those golden arches. Most of them say nothing. Some of them eventually do.

    Over the years, a steady stream of former crew members, shift managers, and even a former corporate chef have let slip details that the chain would probably prefer stayed inside the kitchen. Some are harmless, some are surprisingly useful, and a few will change the way you order forever.

    McDonald’s uses secret shoppers, sometimes called “Gapbusters,” to check on their restaurants throughout the day. These aren’t just random customers eating burgers for fun – they’re paid to order food, evaluate the experience, and report on everything from how hot the fries were to how friendly the cashier acted. Store managers take these evaluations extremely seriously because the ratings directly affect how the location is viewed by corporate.

    Gapbusters will almost always ask for a receipt in order to be reimbursed for their order. Since many customers don’t bother asking for receipts on small purchases, this simple request can immediately set off alarm bells for employees. If they assume the customer is a secret shopper, they may do everything possible to ensure that person’s food is especially fresh and high-quality.

    If you swear McDonald’s Coke is better than Coke anywhere else, you’re not imagining it. The chain follows guidelines set forth by Coca-Cola, but the water and syrup are pre-chilled before entering the fountain dispensers, with the syrup ratio calibrated to account for ice melt. The straws served with soft drinks are also wider than a typical straw, making each sip more flavorful.

    Not all McDonald’s eggs are created equal. The round eggs on Egg McMuffins are fresh-cracked, while the folded eggs used on biscuits and bagels come pre-cooked and frozen. Employees who want breakfast during their shift almost always go for the round-egg sandwiches because they taste noticeably better.

    The folded egg is a frozen, fully cooked egg square that gets heated before being placed on biscuit and bagel sandwiches. McDonald’s also uses liquid eggs for its Big Breakfast, which is the scrambled eggs served with a biscuit, hash browns, and sausage patty. So the type of egg in your breakfast sandwich varies quite a bit depending on what you order, and most customers have no idea.

    According to employees on Reddit, the chain makes its sweet tea by combining 5 gallons of water, an industrial-sized tea bag, a 4-pound bag of sugar, and a gallon of ice. That works out to roughly 40 grams of sugar per small cup of tea.

    That’s a lot of sweetness in every cup. A small serving contains around 40 grams of sugar, which is about the same as many sodas. If you like your tea extra sweet, this one definitely delivers – but it’s worth knowing you’re getting a serious sugar hit with every single sip. It’s one of those items that sounds innocuous on the menu but is anything but light on the inside.

    McDonald’s doesn’t have a secret menu in the traditional sense. The chain wants to make sure it has an ingredient statement for everything it sells, complete with all the nutritional information that comes with it – which rules out any truly off-book items.

    That said, if you ask for an off-menu item, staff might not know how to make it. But tell them exactly what you want, and they’ll often put together almost anything they have the ingredients for. Many people order a grilled cheese, for example, though it comes with some risk since the bun toaster wasn’t designed for it and can lead to burnt buns or cheese sticking and slowing everything down.

    The issue gets worse during off-peak hours. In the middle of the afternoon or late at night, when fish sandwich orders are few and far between, that Filet-O-Fish might have been assembled hours ago. Some employees admit they’ve seen fish patties sit for so long that the bun becomes completely soggy. It’s not a flaw in the recipe. It’s a flaw in the math of how rarely it gets ordered.

    Most of these details aren’t the result of negligence or bad intentions. They’re the natural byproduct of running an operation at extraordinary scale, under relentless time pressure, with constantly rotating staff. Knowing them doesn’t necessarily make McDonald’s a worse place to eat. In many cases, it just makes you a smarter customer.
