Jambalaya isn’t known for being a meal that you eat when you are watching what you eat. If you are making healthy choices for you and your family, this classic Instant Pot Jambalaya is a lighter version with all the same flavor.
How Long Does the Best Jambalaya Last
After this best jambalaya has cooled, make sure to put in an airtight container and store it in the refrigerator. It will last up to 4 days when stored properly.

Jambalaya is delicious but it is not the most weight friendly meal. Following a traditional recipe, Jambalaya comes in at 14 points per serving. You could make this meal even lighter in Weight Watchers points if you swap the rice for cauliflower rice. We do this very often with recipes, but with this one, I want the traditional rice so have not made the swap.
Gumbo vs Jambalaya
A lot of people get Gumbo and Jambalaya confused. They are similar dishes but when it comes to gumbo vs Gumbo vs jambalaya there is a difference. Gumbo is a stew that is served with a side of rice either alongside or on top of. Jambalaya is a casserole that has the rice cooked in the same pot. Both dishes are seasoned with traditional New Orleans flavors.

Jambalaya Ingredients
- Olive oil
- Cajun Turkey sausage (Or turkey sausage and add cajun seasoning)
- Boneless chicken breast
- Red onion
- Green pepper
- Red pepper
- Celery
- Garlic
- Rice
- Salt
- Cajun seasoning
- Thyme
- Fire-roasted tomatoes
- Chicken broth
- Shrimp
How to Make Jambalaya
Chop the onion, green pepper, red pepper, and celery.
Slice the cajun sausage, set to the side.
Cut the chicken into bite sized pieces, set to the side.
Turn the Instant Pot to Saute on high, and add the olive oil.
Add the chopped chicken to the Instant Pot to brown.
Brown for 3 minutes. Stir so that it does not stick to the Instant pot.
Turn the Instant Pot off.
Add the chicken broth to the instant pot.
Add the onion, green pepper, celery, garlic, salt, Cajun seasoning, and thyme. Stir to combine.
Add the rice, can tomatoes, stir to combine. Put the lid on the Instant Pot and set it for Manual High Pressure for 7 minutes.
Once the pressure cooker has finished cooking let it rest for 5 minutes, then manually release the pressure.
Take the lid off. Add the cooked shrimp, sausage to the Instant Pot. Replace the lid.
Allow the jambalaya to sit for 5 minutes to heat up the shrimp and sausage.
Serve sprinkled with scallions.

Instant Pot Jambalaya
Ingredients
- 1 tsp. olive oil
- 8 oz 1 package cooked Cajun Turkey sausage (Or turkey sausage and add cajun seasoning)

- 1 14 oz can diced fire roasted tomatoes
- 1 3/4 cup chicken broth
- 8 oz cooked shrimp thawed and shells removed
Directions
- Chop the onion, green pepper, red pepper, and celery.
