    Baked Corn Recipe

    Part of my mom’s New Year’s resolution was to clean up her house and declutter things. For me, that means she handed me an old container full of recipes that use to be my grandmother’s. So I have been having fun going through the recipes and making some of the things that she use to make for me.

    My husband, who is crazy finicky when it comes to food, has been looking through them too. He found one recipe he begged me to make for him. Baked corn became the perfect side dish for our Sunday night dinner.

    Baked Corn Recipe

    Baked Corn Recipe

    3 Tbsp butter

    2 Tbsp flour

    1 1/4 cup milk

    1 Tbsp sugar

    2 cups, about 1 can, whole corn, drained

    salt and pepper- to taste

    2 eggs, beaten

    Preheat oven to 350.

    In a medium sauce pan, melt the butter.

    Once it is melted, add in flour and mix well.

    Add in milk slowly, stirring well.

    Bring to a boil while stirring constantly.

    Remove from heat and add in the corn and sugar.

    Season with salt and pepper to taste.

    Temper the eggs by adding a small amount of the mixture to the eggs, stir well.

    Add the eggs to the corn mixture.

    Mix everything well and add to a greased 8*8 baking dish.

    Bake for 45 minutes.
