School is starting for us next week, and for many school has already started. My kids hate to eat breakfast in the morning unless it is a hot cooked meal. But that takes time to make and then time to eat. And my kids are like me, they just do not want to get up any earlier than they have to. That is what makes these an easy breakfast for school.
These quesadillas are perfect for busy mornings, but honestly, they are great busy anytimes. Have them for breakfast, lunch and dinner or even a snack. Because they take so little time to make, you will want to have the ingredients on hand. I have even made them ahead of time and then reheated them when we had no time to cook.
A Breakfast Quesadilla are a great solution. The are quick and easy to throw together and can be taken to eat on the run. More or less. This is a simple recipe my family loves. And just about everyone in the family can make it.
Ingredients:
tortilla shells
eggs/scrambled eggs
fillings: cooked bacon, cheese, friend onions, sauteed veggies, whatever kind of things you like in yours. I have even made them with potatoes.
By having the eggs already cooked and scrambled, there is very little time involved in making and heating it. But even cooking the eggs at that moment doesn’t take that long.
Each one of the kids can customize their breakfast to exactly how they like it. Some like veggies, some like onions, or extra cheese.
To cook these quesadillas, simple fill the tortillas with the filling.
Once it is filled, you can either microwave for 30 seconds or pan fry them.
Put butter in a frying pan. Once melted, placed the filled tortilla in the pan. Cook until brown.
Flip the quesadilla and brown the other side.
