    We love the Cookie Monster. Whenever we could see him when we went to Sesame Place, we made a b-line straight to him. Willow wanted to snuggle right into him. That is why we wanted to make desserts to bring the Cookie Monster fun home. These Cookie Monster Cupcakes are just too cute.

    Cookie Monster Cupcake
    Makes 24 cupcakes

    You know me, I love shopping online. Click the links to purchase.

    Cupcake Ingredients
    1 box of milk chocolate cake mix
    3 eggs
    1/2 C oil
    1 C water
    (measurements for the eggs, oil and water will change based on which brand of cake mix you purchase)
    dark blue cupcake liners
    cupcake pan

    Frosting Ingredients
    1 C unsalted sweet cream butter, softened
    2 1/2 C powder sugar
    1 tsp vanilla
    3-5 TBSP heavy whipping cream
    3-5 Drops of royal blue food coloring
    white candy melts
    edible black marker
    Double Stuff Oreo cookies
    piping bag with a medium star tip

    Directions for cupcakes
    Preheat oven to 350 and line cupcake pan with the liners
    In a medium bowl, combine the cake mix, eggs, oil and water and mix until combined
    Using a medium ice cream scoop, scoop the batter into the cupcake liners and fill about 3/4 of the way full

If frosting is soft, add 1/4-1/2 C powder sugar until you get thick frosting Add in the food coloring. Add more food coloring to get the shade of blue that you like. Take two candy melts for each cupcake and the black marker. Using the marker, add black dots in the middle of the candy melts for the eyes Scoop the frosting into the piping bag. Take the cooled cupcake and start piping frosting from the edge to the center. Add the eyes to the top of the cupcake Cut an Oreo cookie in half and place the cookie in the bottom part of the frosting where the "mouth" would be. Enjoy!     Bake in the oven for about 21 minutes
    Pull out and place on the side to cool

    Add in the food coloring. Add more food coloring to get the shade of blue that you like.

    Set aside while you prep the eyes.
    Take two candy melts for each cupcake and the black marker.
    Using the marker, add black dots in the middle of the candy melts for the eyes
    Scoop the frosting into the piping bag.
    Take the cooled cupcake and start piping frosting from the edge to the center.


    Add the eyes to the top of the cupcake
    Cut an Oreo cookie in half and place the cookie in the bottom part of the frosting where the “mouth” would be.
    Enjoy!
