Creamy Chicken and Gnocchi Recipe
Ingredients
- 1 ½ – pound boneless chicken breasts
- 2 tablespoons olive oil
- ¼ cup balsamic vinegar
- 8 ounce baby Bella mushrooms sliced
- 2 tablespoons garlic minced
- 1 cup chicken broth
- 1 cup mozzarella cheese shredded
- ½ cup Parmesan cheese
- 1 ¼ cup heavy whipping cream
- 17 ounce gnocchi
- 3 cups baby spinach
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
Directions
- Heat the olive oil on medium high heat in a large skillet. Season chicken with salt and pepper. Add chicken to the pan and cook for 4-5 minutes, or until golden brown. Turn over and repeat. Remove the chicken, place it on a bowl and set it aside.
- Reduce heat to medium and add the remaining olive oil. Add the mushrooms and cook 4-5 minutes. Add in the garlic, salt, pepper and oregano.
- Add in the broth and scrape up any brown bits from the pan.
- Slowly mix in the heavy whipping cream and bring to a bubble. Add in the gnocchi.
- Return the chicken to the pan and cook for 10-12 minutes, or until the chicken is cooked through and no pink is showing. Remove the chicken from the pan and set aside.
- Stir in the cheeses.
- Add the spinach and cover the pan. Allow the spinach to just begin to wilt.
- Slice the chicken and return to the pan. Serve immediately.
