Why is my steak tough and chewy?
Steak is made up of muscle fibers that are broken down and as the proteins turn into gelatin and this makes the steak tender. With some cuts of meat, like filet mignon, this happens fast. With tougher cuts of meat, it will need to be cooked low and slow, usually with a liquid so that it doesn’t dry out.
Also, when you overcook the meat it will become tough, even if it is from the tender cuts of meat. The heat causes the proteins to firm up. When it is overcooked, the moisture is pushed out of the meat and this makes it dry and tough.

Ingredients in Garlic Butter Sauce for Steak
- paprika
- salt
- garlic powder
- onion powder
- chili powder
- dried thyme
- dried oregano
- cayenne powder
- black pepper
- Sirloin steak
- olive oil
- unsalted butter
- garlic cloves
How to Make Garlic Herb Butter for Steak
Combine all of the ingredients for the Cajun seasoning in the bowl. The paprika, salt, garlic powder, onion powder, chili powder, dried thyme, dried oregano, cayenne powder, and the black pepper. Whisk to combine.
Add the steak bites to the bowl. Toss the bites to coat them with the seasoning.
Add 2 teaspoons of oil in the skillet over medium-high heat until the skillet is hot.
Add small batches of the steak bites cooking them on each side for 2-3 minutes. (Until the edges are crispy and browned)
Add more oil as needed. Remove the steak bites,
Set aside.
Reduce the heat to medium. Slowly add butter to the skillet heating until melted. Add the chopped garlic, Saute for about 30 seconds (until fragrant), Scrap up any browned bits from the pan.
Remove the skillet from the heat. Slowly add the steak bites back into the skillet tossing them through the garlic butter. ( evenly coat the bites)
Serve warm.

- 23 oz Sirloin steak cut into 2 inch cubes
- 1-2 TBSP canola oil divided
- 1/4 C unsalted butter
- 4 garlic cloves finely chopped
