    Chicken thighs tend to be more flavorful and tender than chicken breast and the taste is amazing. When you make these Marinated Baked Chicken Thighs, you get even more flavor into this delicious dinner.

    What is a Good Marinade for Baked Chicken Thighs

    This herb marinade uses simple healthy ingredients that give a lot of flavor. The marinade uses Extra virgin olive oil, Garlic cloves, Ground cumin, Cayenne pepper, Italian seasoning, and Orange juice and zest.

    How to Store Oven Baked Chicken Thighs

    Once the chicken thighs are baked and cooled, you will want to store them in an airtight container in the refrigerator.

    How Long Do Baked Boneless Skinless Chicken Thighs Last

    The cooked chicken will last 3 to 4 days when stored properly in the refrigerator. You can also move the baked chicken to the freezer in a freezer bag or airtight container and it will last about 3 months.

    How Long to Bake Chicken Thighs

    When you are baking these chicken thighs you want to bake them for about 25 to 30 minutes. Set the temperature to 400 degrees and place the thighs on a baking sheet.

    What is the Right Chicken Thigh Temp

    When you are cooking baked chicken thighs, you want the internal temperature to be 165 degrees. Using a meat thermometer, stick it in the thickest part of the chicken thigh. If your chicken has a bone, be sure to not touch the bone when taking the temperature.

    Ingredients in Baked Chicken Thighs

    • Boneless, skinless chicken thighs
    • Extra virgin olive oil
    • Garlic cloves
    • Ground cumin
    • Cayenne pepper
    • Italian seasoning
    • Orange
    • Salt and Pepper
    • Tri-color fingerling potatoes
    • Fresh parsley

    Whisk together the marinade ingredients: olive oil, garlic, cumin, cayenne pepper, Italian seasoning, orange juice, and orange zest in a medium bowl. Season with salt and black pepper, to taste, and set aside this easy marinade.

    Place the skinless boneless chicken thighs in a gallon-size freezer bag and pour half of the marinade on top. Seal the bag tightly while removing any excess air. Turn bag several times to ensure the chicken is evenly coated and marinate at room temperature for 30 minutes or place in the refrigerator for one hour to overnight. Turn bag occasionally while marinating to evenly distribute flavors. Reserve unused portion of marinade for later use.

    To prepare, place on the top oven rack in the center position and pre-heat oven to 400°F. Line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat and set aside.

    Remove chicken from marinade and place on the prepared baking sheet and generously season with additional salt and black pepper, if desired. Discard bag and the remaining marinade inside.

    Toss the potatoes in a large bowl with the reserved, unused marinade and season with salt and black pepper, to taste. Arrange the seasoned potatoes around the chicken thighs in a single layer without overcrowding.

    If you are looking for a different side dish option, replace the fingerling potatoes with Instant Pot Mashed Potatoes.

    Place the baking sheet in the pre-heated oven to roast until the baked chicken thighs are fully cooked through and the potatoes are fork-tender, approximately 25-30 minutes. Remove from oven and cool slightly before serving. Enjoy!

    Ingredients
      

    • 1¼ lbs. boneless skinless chicken thighs

    • 3 T. orange juice
    • 1 T. orange zest

    • 1 lb. tri-color fingerling potatoes
    • Fresh parsley for garnish

    Directions
