    Pink Lemonade Cookies

    When you’re looking for something different to serve up as a treat, consider these great pink lemonade cookies. They’re different, and they’re delicious. These are perfect for an after school snack, for taking to a picnic, or really for any occasion. I love these cookies in the summer because they just seem to really bring out the spirit of the season, but you really can have them any time of year. In fact, if you wanted to hang on to the recipe and pull it out in the cooler months to bring that spirit of summer back to you a bit, that’s also a great idea.

    I love pink lemonade. The lemonade flavor takes me back to my childhood, a cool refreshing way to chill out on a hot summer day, but the pink gives it a smoother, fruity flavor that I have always enjoyed. I love all types of pink lemonade – frozen, over ice, with fruit inside – but one thing I’ve never heard of was pink lemonade cookies. When I saw this recipe, I knew I had to try it myself and this one is a favorite because it’s not too tart. The cookies come out sweet and great, and with that pink lemonade flavor I love, but without too much tartness. So, read on to find out how to make these amazing pink lemonade cookies for yourself.

    Here’s what you’re going to need to make these cookies.

    Ingredients:
    2 3⁄4 cups Flour
    1 tsp Baking Soda
    1⁄2 tsp Baking Powder
    1/3 – 1⁄2 cup Pink Lemonade Powder
    1 cup Butter (softened)
    1 1⁄2 cups Sugar
    1 tsp Vanilla Extract
    1 tsp Pure Lemon Extract
    1 Egg

    Once you’ve gathered all of your ingredients, here’s all you need to do to get started.
    Directions:
    1. Preheat oven to 375 degrees.
    2. In one bowl whisk together flour, baking soda, baking powder, and lemonade powder. Set aside.
    3. In a large bowl cream together butter and sugar until it is well mixed and smooth. Blend in egg,
    vanilla, and lemon extract.
    4. While mixing, slowly add in dry ingredients. Mix well. Dough should break into pieces, but still
    be sticky enough to be pressed together. If it isn’t sticky enough, add water a tablespoon at a
    time until ready.
    5. Roll dough into balls and place onto an ungreased cookie sheet.
    6. Bake for about 8 minutes. Watch carefully. The tops should just start to brown, they’ll be
    crunchy if you let the tops fully brown. Let cool for 2 minutes before removing from the cookie
    sheet.
    7. OPTIONAL: sprinkle with some confectioners sugar. Serve with a cool glass of lemonade.
