In the past few years, I have discovered that I have a gluten sensitivity. Nothing major but it does give me headaches. Once we figured it out, I started trying to eliminate gluten whenever I could. It was a hard thing for me to do for a long time. I still wanted things like pasta and bread, cakes and cookies and brownies. I would try to make my own almond flour but it was tough and honestly it was expensive too. I also missed the convenience of just grabbing ingredients and baking. Recently I have discovered that one of my favorite box mix brands have come out with a gluten free option.
Let me tell you. I have been having fun recreating a lot of my favorite recipes using the new gluten-free mixes from Krusteaz. I have been indulging on gluten free brownies in a mug, a gluten free twist on Sheppard’s pie and one of my favorites, gluten free coffee cake muffins. Not to mention just using the mixes straight as is for brownies, blueberry muffins, and pancakes.
My gluten free coffee cake muffins start with a mix, but not the kind you would think. It starts with gluten-free pancake mix from Krusteaz.
Short Cut Gluten-Free Coffee Cake Muffins
Ingredients:
2 1/2 cups Krusteaz Gluten Free pancake mix (If you are using regular pancake mix, you want the mix that just needs water.)
1/4 cup sugar
1/2 cup water
1 egg (You do not need this is you are using regular pancake mix)
1/2 cup sour cream
1/2 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
For topping:
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
Directions:
Preheat oven to 375 F degrees. Line a muffin pan.
Combine the mix, sugar, egg and sour cream in a bowl. Then add water and vanilla. Mix until it is combined but there will be small lumps.
Fold in the chocolate chips
Spoon into the muffin liners about half way.
Combine the topping and sprinkle over the top of each muffin.
Bake 23-27 minutes until golden brown.
Remove from the pan and let cool on a cooling rack.
These Gluten-free coffee cake muffins are a nice breakfast treat or perfect for an after dinner snack.
