Planning on making this this weekend and so excited. About how much would you say is a “large piece of ginger”?

I do a chunk about from one knuckle on my finger to another. If that makes sense

I just saw this recipe and it sounds amazing!
Question – I am not sure which “simple syrup” you are saying should go into the glass with the pears though. I’m guessing that it is the one that is made by cooking the honey, pears, ginger and sage together and gets strained into a bowl? But since the recipe links to a simple syrup recipe with mint – I wasn’t sure if that’s what you are saying goes in the glass with the pears?
I just wanted to make sure – thank you!

The link for the Simple Syrup is just linking to another recipe on our site in case you prefer a mint-flavored simple syrup. However, you are correct, the directions to make the syrup is in the recipe card. Let me know if you make it and what you think about it.
