    Asian Cabbage Salad

    Asian cabbage salad is a healthy alternative to other salads you may otherwise enjoy or serve at mealtime. Cabbage is an extremely healthy vegetable that’s full of nutrients and rich in vitamins.

    Combine this veggie with maple syrup, sriracha sauce, and the other ingredients to make an Asian cabbage salad that’s slightly crunchy with a semi-sweet but spicy flavor that’s perfect as an easy side dish with your favorite grilled meal.

    What’s the Best Cabbage for Salads?

    The healthiest cabbage to use for salad is red cabbage. One cup of raw red cabbage contains 2 grams of fiber and about 85% of your daily vitamin C needs. Green cabbage is another worldwide popular cabbage option that’s used for salads.

    My Asian cabbage salad combines both green and red cabbage to provide you with the best flavor and texture as well as giving you the nutrients you desire in a salad. Green and red cabbage have similar textures to allow you to enjoy a nice crunch with each bite, but red cabbage has extra nutrients and it provides a pretty presentation with its red color in a salad.

    Can This Be Made Ahead of Time?

    You can make this Asian cabbage salad head of time. You can make the spicy peanut dressing at least one day ahead and store it in your fridge. Use an airtight container with a lid to store your peanut dressing for this cabbage salad.

    To prepare the Asian cabbage salad ingredients ahead, you can chop all of the ingredients one day before you plan to make this salad. Store the chopped up ingredients in a bag or airtight container in your fridge to mix the ingredients on the day you plan to serve this delightful salad.

    If you want to make the Asian cabbage salad as a full salad ahead of time and store in the fridge for an upcoming event or meal, that’s fine too. Simply follow the instructions make this cabbage salad, and store in an airtight container in your fridge. Cabbage will last about 3-4 days in the fridge, with our without dressing on it.

    • Peanut butter
    • Rice vinegar
    • Sesame oil
    • Sriracha sauce
    • Salt and pepper
    • Soy sauce
    • Sugar free maple syrup
    • Fresh lime juice
    • Fresh ginger
    • Garlic
    • Mandarin oranges
    • Green cabbage
    • Red cabbage
    • Carrots,
    • Red bell pepper
    • Green onions
    • Cilantro
    • Toasted peanuts
    • White sesame seeds

    How to Make an Asian Cabbage Salad

    Combine shredded green and red cabbage with carrots, bell pepper, green onion, and fresh cilantro in a large bowl. Season with black pepper and salt to taste and drizzle with a small amount of the warm spicy peanut dressing.

    Toss to combine.

    Transfer your Asian cabbage salad to a decorative serving platter and top with chopped peanuts, mandarin oranges, and sesame seeds.

    Serve immediately with the spicy peanut dressing on the side.

    How to Make Spicy Peanut Dressing

    For the dressing, you’ll combine peanut butter, vinegar, sesame oil, and sriracha sauce in a medium skillet over medium heat. You’ll want to season with salt and black pepper as desired for taste.

    Heat the sauce for approximately 2-3 minutes stirring continuously until the peanut butter is melted and the ingredients are combined.

    Reduce heat to low and whisk your remaining ingredients for the dressing into the medium skillet until combined.

    Stir occasionally while simmering until heated through, approximately 2 minutes.

    Remove the sauce from heat and keep warm.

    • 4 C green cabbage shredded
    • 2 C red cabbage shredded
    • 2 Large carrots shredded
    • 1 Medium red bell pepper sliced thin
    • 2 green onions green parts only, sliced
    • 1/4 C fresh cilantro leaves chopped
    • 1/4 C toasted peanuts chopped
    • 1 10 oz can sugar-free Mandarin oranges packed in juice
    • 1 T white sesame seeds
    • Sea salt and black pepper to taste

    Spicy Peanut Dressing

    • 1 C peanut butter
    • 3 T rice vinegar
    • 1 t sesame oil
    • 2 t sriracha sauce
    • 3 T soy sauce
    • 1 1/2 T maple syrup
    • 2 T fresh lime juice
    • 1 T fresh ginger finely minced
    • 1-2 cloves garlic finely minced
    • 1/4 C liquid from Mandarin oranges
    • salt and pepper to taste

    Directions
     

    • Combine shredded green and red cabbage with carrots, bell pepper, green onion, and fresh cilantro in a large bowl. Season with black pepper and salt to taste and drizzle with a small amount of the warm spicy peanut dressing.
