    A few years ago, when at a picnic, there was this colorful dip that got my attention. It was served with tortilla chips. The salty chips paired so well with the light, refreshing dip that is was a match made in heaven.

    The fresh summer ingredients in Cowboy Caviar looks like chunky salsa, but once the Italian flavors come through, you’ll know that this is a dip recipe all its own.

    Is there fish in Cowboy Caviar

    No. There is no fish or fish eggs like people think of when they are eating caviar. This is called Cowboy Caviar because it is made of small chunks, kind of like the caviar is made of small fish eggs, but it is veggies and beans.

    Is Cowboy Caviar Good for A Picnic?

    One of the things that I love about making this as a picnic side dish is that it holds up well, even on warm days. There isn’t anything that will spoil like the case with some pasta salads or potato salad. Also, it is a great choice when someone is looking for something helathy amoung the delicious, but not so great for options at the picnic.

    Since I started making my own Cowboy Caviar, I have learned what my family likes about it and what needed to be changed. While I have seen a lot of cowboy caviar recipes use avocado, my family doesn’t like it, so I tend to leave it out. If you find you would like it in this picnic side dish, one ripe avocado is the amount you would include.

    The trick to making cowboy caviar is to dice the ingredients, besides the beans, into small pieces. This keeps everything about the same size.     Refrigerator: This recipe will last for 5 days in the refrigerator.

    Freezer: Cowboy caviar can be stored in the freezer, in an airtight bag, for up to 3 months.

    How Many Weight Watcher Points is Cowboy Caviar?

    This recipe makes 10 servings. Even with the Italian dressing (use fat-free), this is only 1 point per serving, It is so good as a dip or as a side dish. Each serving is about 1 cup.

    Ingredients
      

    • 3 Roma tomatoes seeded and diced
    • 2 red peppers diced
    • 3 garlic cloves minced
    • 1 can jalapenos Diced – I prefer canned jalapenos
    • 3 stalks Green onion
    • 16 ounce can of black beans drained and rinses
    • 16 ounce can of black-eyed peas drained and rinsed
    • 16 ounce can of white corn
    • 10 ounces Italian dressing Weight Watchers use Fat Free

      What is a serving size? and how long will this stay if refrigerated
