Season the chicken and cook, over medium heat, it in the pan until it is golden brown. Then remove the cooked chicken breasts from the pan.
Add the balsamic vinegar and garlic. Stir in the basil and the tomatoes.
Return the chicken to the skillet. Place the mozzarella slices on top of the chicken. It’s ready when the melted mozzarella cheese is gooey.
To serve, top with the remaining fresh basil leaves and enjoy.
Hint: Make it baked caprese chicken. You can also place everything in a baking dish and bake it at 350°F (177°C) for 15 to 20 minutes.

- I’m using grape tomatoes. Tomato slices can also be used. I am using grape tomatoes but roma tomatoes or juicy cherry tomatoes.

- If you don’t have balsamic vinegar, you can use red wine vinegar.
- I am using mozzarella slices but you can also use fresh mozzarella cheese. Avoid pre-shredded cheese for best results.
- For a cheesier variation, try adding some Parmesan cheese to the dish. You can also add different vegetables like bell peppers or mushrooms for more flavor.

Ingredients
- 1 pound boneless chicken breasts
- 1 tablespoon olive oil
- ¼ cup balsamic vinegar
- 2 tablespoons garlic minced
- 1 pint grape tomatoes halved
- 2 tablespoons fresh basil
- 4 slices mozzarella cheese
- 1 teaspoon salt and pepper
Directions
- Heat the olive oil on medium high heat in a large skillet. Season chicken with salt and pepper. Add chicken to the pan and cook for 4-5 minutes, or until golden brown. Turn over and repeat. Remove the chicken, place it on a bowl and set it aside.
- Add the balsamic vinegar and garlic to the pan. Cook for 1 minute.
- Stir in the basil.
- Add the tomatoes and cook for 5-7 minutes or until soft.
- Return the chicken to the skillet. Place the mozzarella slices on top of the chicken. Cover until the cheese melts.
