    Irish Dumplings and Chicken Stew

    What is Irish Stew?

    There are many ways to make an Irish stew. There are Irish Beef Stew recipes and Irish Lamb Stew recipes. I personally love this Irish Chicken and Dumpling stew recipe. It is creamy and filling and incredibly delicious. I look forward to eating all winter long on a chilly night. I have been known to make Irish Stew on plenty of summer nights.

    • Cream of chicken soup
    • Onions
    • Celery
    • Chicken breasts
    • Carrots
    • Potatoes
    • Green Peas
    • Salt and black pepper
    • Baking mix
    • Milk

    🍳 How to Make Irish Chicken and Dumplings

    In a heavy soup pot, start by combining the water, soup, onions, celery, seasoning, and bite-sized pieces of chicken. Cover and cook for 2 hours, on low heat.

    Toss in the carrots and the potatoes. Cook for 30 minutes.

    Stir in the peas and cook for another 10 minutes.

    Mix together the dumplings by combining the baking mix and milk until soft dough forms. Bring the stew up to a boil Drop dumplings into the stew by the spoonful.

    Reduce stew to a simmer. Cook for 10 minutes covered. Remove the cover and cook for another 10 minutes.

    Hint: Be sure to bring the stew to a boil before adding the dumpling dough. This helps to ensure that the dumplings will cook through in the stew.

    🥄 Variations to This Dumpling Soup

    • If you are looking for an even creamier stew, add in 2 tablespoons of butter at the end of cooking. It will give it a nice finish.
    • Add some garlic powder or chopped fresh herbs to the dumplings dough. Adding poultry seasoning to the stew adds a delicious flavor.
    • Swap the water with chicken stock for additional flavor.
    • You can also try adding other vegetables, such as celery, sweet potatoes, parsley, or green beans.
    • Boneless, skinless chicken thighs can be used instead of chicken breast.
    • If you do not have baking mix, you can use a dumplings recipe using regular flour.
    • If you don’t like chicken, you can substitute it with beef stew meat or pork.

    This is a meal that can be eaten by itself or adding in some extra veggies on the side. Of course, I love adding some crusty bread or homemade dinner rolls.

    This traditional Irish dish is great served with a side of mashed potatoes, steamed green beans, roased asparagus or roasted Brussels sprouts.meal.

    Refrigerator Storage: Store in an air-tight container for up to 5 days.

    Freezer Storage: Freeze in a freezer-safe container or bag for up to 3 months. Thaw overnight before reheating.

    Reheat: Reheat in the microwave or on the stove top.

    💭Tip for Making the Perfect Hearty Meal

    • Irish StewThe key to a great stew is long, slow cooking. Cook the stew on low heat and be sure to stir it every 20-30 minutes. This will ensure that all ingredients are cooked evenly and tenderly.
    • If you like a thicker stew add an extra can of cream of chicken soup or use less liquid in the beginning.
    • If your stew is too thick, add a bit more water or chicken broth. Be sure to bring it back up to a boil before adding the dumpling dough.
    • Don’t be afraid to experiment with different vegetables and seasonings. You can easily adjust this recipe for any taste preference.

    Can I use frozen or canned chicken?

    Yes, you can use frozen chicken for this recipe. Just be sure to thaw it before adding it to the stew. For canned chicken, be sure to drain it well first.

    Can I make this without dumplings?

    Absolutely. You can omit the dumpling dough and just enjoy the stew as is. It will still be delicious.

    Can I make this in a slow cooker?

    Yes, you can definitely make this in a slow cooker since it is an easy one-pot meal. Just add all of the ingredients (except the dumpling dough) to the slow cooker, set it on low and let it cook for 6-8 hours. When ready to serve, make the dumplings and add them to the slow cooker. Cook on high heat for another 30 minutes until the dumplings are cooked through.

    How Many Weight Watchers Points in Irish Chicken Stew

    You want to use 98% fat free cream of chicken soup. Also, I decrease the amount of potatoes to 3 and decrease the amount of Bisquik to 1 1/2 cup, as well as decrease the milk to 1/2 cups. This brings the points down to 9 points per serving. To lower the points even more, I like to add another chicken breast, 5 total, and more vegetables and this increases the serving size to 8 and this brings the total to 7 points per serving.

    Ingredients
      

    • 4 cups water
    • 2 cans cream of chicken soup

    • Drop dumplings into the stew by the spoonful. Reduce stew to a simmer. Cook for 10 minutes covered. Remove the cover and cook for another 10 minutes.

    Weight Watchers Changes:
    When you are making this Irish Chicken stew you will want to change a few things in order to get the lowest points possible without giving up any of the flavor.
    • Use 98% fat free cream of chicken soup.
    • Decrease the amount of potatoes to 3
    • Decrease the amount of Bisquik to 1 1/2 cup
    • Decrease the milk to 1/2 cups.
    • Add another chicken breast, 5 total, 
    • Add more vegetables
    • Increases the serving size to 8
