    Since this pork stew recipe uses pork tenderloin, the cooking time is greatly reduced but you still get the tender, juicy pieces of pork. With the punch of flavor from the spices, this pork stew is ready in under an hour with that simmered all day taste.

    How Long Does Sweet Potatoes Stew and Pork Last

    This sweet potatoes strew and pork needs to be stored in the refrigerator. Once the stew has cooled, move it to an airtight container. Some people like to leave the stew in the pot wrapped in plastic. When you store it properly in the refrigerator, this sweet potatoes stew will last up to 5 days.

    How to Reheat Pork and Sweet Potatoes Stew

    I love the way pork and sweet potatoes stew tastes when it is served the next day. I think the flavor is even better. Since I do not store my pork and sweet potatoes stew in an airtight container rather than in the pot, it needs to be moved to a small pot for reheating on the stove. Sometimes, I will reheat the pork stew in the microwave if it is a small batch.

    Is This a Spicy Pork Stew

    This recipe has some heat to it, but you can easily make it spicy. Add more crushed red pepper flakes or add more chili powder. If you are concerned that it might be too spicy, reduce or leave out the red pepper flakes.

    Ingredients in Pork Sweet Potato Stew

    • Extra virgin olive oil
    • Red onion
    • Celery
    • Garlic
    • Sea salt and black pepper
    • Pork tenderloin
    • Sweet potatoes
    • Black beans
    • Cumin
    • Chili powder
    • Italian seasoning
    • Red pepper flakes
    • Bay leaves
    • Crushed tomatoes
    • Chicken stock or use this Vegetable Stock Recipe
    • Parsley

    How to Make Pork Stew with Sweet Potatoes

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add red onion, celery, and garlic. Season with salt and black pepper, to taste, and stir to combine. Cook, stirring frequently until the veggies soften and develop a bit of color, approximately 3-4 minutes.

    Add pork tenderloin and sweet potatoes and cook, stirring occasionally, until the meat begins to brown, around 2-3 minutes.

    Add black beans and spices and stir to combine. Cook for another 30 seconds, or just until the spices become fragrant. Taste and season with additional salt and black pepper, if desired.

    Add crushed tomatoes and chicken stock and increase heat to high. Bring to boil, and then reduce heat to medium. Simmer, stirring occasionally, until pork is cooked through and the sweet potatoes are fork-tender, approximately 13-15 minutes.

    Remove from heat and discard bay leaves. Stir in 3 tablespoons of fresh parsley. Taste and adjust seasonings, as desired.

    Top with remaining fresh parsley for garnish and serve immediately. Enjoy!

    Tip: Like most tomato-based dishes, this flavorful stew tastes even better the next day – so consider making a double batch to enjoy later!

    • 1¼ lb. pork tenderloin cut into 1” cubes
    • 2 medium sweet potatoes peeled and cut into 1” cubes
    • 15 oz. black beans drained and rinsed
    • 1 t. ground cumin
    • ½ t. chili powder
    • 2 t. Italian seasoning
    • ½ t. crushed red pepper flakes
    • 2 bay leaves
    • 1 14- oz. can crushed tomatoes
    • 2 c. low-sodium chicken stock
    • ¼ c. fresh parsley chopped divided

    Directions

      I made this recipe recently (with pork tenderloin) and it was to die for!
      I’d like to make it with cut up pork loin. Will I still get the tender juiciness or do you have suggestions?
