Add all dry ingredients to a shallow dish. Whisk well.
Add milk, eggs, and mayonnaise to a small bowl. Whisk well.
Dip a piece of chicken, skin side down, into the liquid mixture.
Dredge the chicken, skin side down in the dry mixture. Place the chicken in the prepared baking dish skin side up. Repeat until all chicken pieces are coated and placed in baking dish.
Add the butter and coconut oil into a small microwave safe dish. Microwave in 15 second bursts until completely melted. Drizzle mixture on top of chicken.
Place in the preheated oven and bake at 400° for 30 minutes. Turn up heat to 450° and cook for an additional 10-15 minutes or until the internal temperature of the chicken is 165-170°, until it is golden brown. Remove and serve immediately.
Hint: Turning up the temperature will help crisp up the skin. When cooking the chicken at a lower temperature and then at a high temperature, this will create a crisp skin on the baked chicken.

- 4-5 pounds skin on chicken thighs 8-10 pieces
- 1/3 cup seasoned breadcrumbs
- 1/3 cup mashed potato flakes
- 2 eggs
- 1/3 cup milk
- ½ cup mayonnaise
- 3 tablespoons butter
- 2 tablespoons coconut oil
- ½ teaspoon pepper
- ½ teaspoon salt
