What is Dutch Processed Unsweetened Cocoa Powder
Dutch process cocoa powder is a type of processed cocoa powder that has been treated with an alkalizing agent to neutralize its natural acids and to deepen and widen the flavor.
It’s important to ensure the quality of Dutch-processed cocoa, which also contains around 10% more fat than regular cocoa powder.
In red velvet desserts, the Dutch processed cocoa powder is what used to give the red color. It, also, gave its unique flavor. That and the cream cheese.
Can I Use Regular Baking Cocoa
You can however, there is a reason that the Dutch cocoa is called for. It has a much stronger flavor. Regular baking cocoa just isn’t as strong to me and it doesn’t have that bitter, but sweet taste that I love about the dutch cocoa. For this reason, I am using the Dutch cocoa. If you have a super strong preference or if you just can’t find the Dutch cocoa, then by all means use your favorite baking cocoa. Also, feel free to add some vanilla extract in there for even more flavor.

Can I Make Hot Chocolate For Other Holidays
Red velvet hot chocolate can easily be used for other holidays. With most of these variations, you will want to use sanding sugar to decorate. You can make your own and simply dip the rim of the cup into simple syrup or even water will work. Then the cup looks festive and brings in the holiday feel you are looking for.
Christmas: Make Christmas hot chocolate by keeping the red color. You can dye the whipped cream green or use green sanding sugar.
St. Patrick’s Day: Red velvet might be red by tradition but you can make this a green velvet hot Chocolate and top with whipped cream. Then I would dust the top of the whipped cream with gold sanding sugar to represent the gold of the post of gold.
Valentine’s Day: Red velvet is perfect for Valentine’s day. I would go lighter on the red and use a pretty pink and white sanding sugar combo.
Thanksgiving: Why not make this a orange colored hot chocolate. Bring in that pumpkin look without the pumpkin flavor. Of course, if you have to have that pumpkin spice hot chocolate flavor, you can use homemade pumpkin spice creamer instead of milk in this recipe.
Easter: Easter is all about pastels. I would go light with pinks and purples for the color of the hot chocolate and sanding sugar.
You can make these hot chocolates for other holidays, too. It’s up to you and what your theme for the party is.
