Can you bake with fresh blueberries?
This blueberry muffin recipe is best with fresh or frozen blueberries, although I prefer using fresh blueberries whenever possible. If using frozen blueberries, thaw and dry them first. If using fresh blueberries, toss the fruit with a little flour. This prevents them from sinking to the bottom of the cake.
Can I bake this blueberry mug cake?
You can bake this cake in the oven. However, it will not rise as much as it does in the microwave.
Fill two ramekins with batter, grease the inner linings with butter. Bake them on the middle rack at 350 degrees for 15-20 minutes or until inserted cake tester comes out clean.

If you like, you can dust the blueberries with 1 teaspoon of the flour that is being added to the recipe, This helps the blueberries from falling to the bottom of the batter.
Whisk together the ricotta cheese, butter, honey or syrup, vanilla and egg in a small microwave safe bowl.
Whisk the flour, baking powder, and salt together into the mug.
Add the blueberries on the top
Microwave on high for 3 minutes.
Remove from the microwave and add whatever topping you like.
Be careful as the bowl/mug will be very hot after cooking in the microwave.
