I have never been much of a morning person. I guess not wanting to eat breakfast goes hand and hand with that. Since I never want to get up any earlier than I have to, cooking is not what I want to do as soon as I wake up. Making a microwave omelet in a mug takes no time. Then I can have a healthy breakfast and out the door doing whatever is on the calendar for that day.

Ingredients for Spinach and Feta Omelet in a Mug
- Fat Free Feta cheese
- Fresh spinach leaves
- Salt and pepper
- Lite Butter (optional- not included in WW points)
How to Make Spinach and Feta Omelet in a Mug
Spray your large mug with cooking spray.
Mix together the butter, eggs, feta cheese, and fresh spinach.
Microwave for 1 minute. Stir a little and then microwave for 1.5 minutes more.
Top with more feta cheese and salt and pepper to taste!

- 3 eggs
- 2 tablespoons fat free feta cheese
- 4-5 fresh spinach leaves
- salt and pepper to taste
- 1 tsp lite butter (optional) skip for WW points
- Spray your large mug with cooking spray.
- Mix together the eggs, feta cheese, and fresh spinach.
- Microwave for 1 minute. Stir a little and then microwave for 1.5 minutes more.
- Top with more feta cheese and salt and pepper to taste!
