The cool winter nights will soon be upon us and what is better during these cold months than a rich and delicious soup! This Autumn Squash Soup recipe is a copycat from Panera.
See while I love me some Panera Bread, but the price tag hurts my wallet. When the girls and I go, we easily spend $50.
I can make a batch of the Panera Autumn Squash for a fraction of the cost. We have most of the ingredients on hand most days, so it costs me very little to make.

Butternut Squash Soup Recipe
This is a delicious and simple butternut squash soup recipe. The only special equipment is the food processor or immersion blender mentioned below.
If you are looking for another easy fall recipe, try making apple cider donuts or Jewish Apple Cake for dessert. So good!
Can You Eat Butternut Squash Seeds
Yes! They are actually very nutritious. Butternut squash seeds are a good source of protein, fiber and healthy fats.
They are also a good source of vitamins and minerals, including magnesium, phosphorus, zinc, and vitamin E.
To roast the seeds, simply rinse them off and spread them on a baking sheet. Roast at 375 degrees F for about 10 minutes. Let them cool before enjoying.

What are the Seeds on the Squash Soup at Panera?
I use butternut squash seeds on top of my soup because I have them from roasting the squash.
When you get this soup at the restaurant, they use roasted pumpkin seeds. I do not always have them on hand and I would rather use what I have with the squash.
Is Panera Autumn Squash Soup Vegan?
It can be. This version is made using vegetable stock and veggies. But there is milk in it, making it vegetarian but not vegan. You can use a non dairy version, like almond milk, oat milk or soy milk.
Does Panera Squash Soup have Sugar?
My recipe does not have any added sugar in it. From I can tell from the ingredients in the Panera Squash Soup that is packaged, there is no additional sugar added.
What to Top the Soup With/Toppings Ideas
There are so many delicious options for toppings! Here are a few of my favorites:
- Bacon
- Chives
- Croutons
- Roasted Squash Seeds. You can also use Pumpkin seeds
- Shredded cheese
- Sour cream or plain Homemade Greek Yogurt
- Dried cranberries
- Chopped green onions
Variations
If you want to add a little something extra to this soup, try stirring in some cooked pasta, rice or quinoa when reheating.
You could also stir in some cooked chicken or turkey to make this soup a complete meal.
If you are looking for a little more flavor, try stirring in some sage, thyme, or even more curry powder. Start with just a 1/2 teaspoon and add more to taste.

This soup can be served as a main dish or as a starter. If you are serving it as a main dish, I like to serve it with a green salad and some crusty bread. If you are serving it as an appetizer, try pairing it with Parmesan Crisps.
As a side dish, this soup can be paired with Marinated Chicken Breast or Garlic Butter Steak Bites. It also tastes great with Grilled Pork Chops.

This soup should be stored in an airtight container in the refrigerator. Make sure the soup is cooled completely before placing it in the refrigerator. The soup will last for 3 days. .
Can you Freeze Panera Squash Soup?
You can also freeze Panera Autumn Squash Soup. I like to freeze this copycat soup in smaller portion sizes.
Enough to pull from the freezer as a single serve meal. It can be frozen in a large batch too.
How to Reheat Copycat Panera Autumn Squash Soup
Thaw the soup in the refrigerator overnight. Then warm on the stove over medium heat until heated through.
You could also reheat in the microwave, but I find that it tends to make the soup a bit watery.
Is Panera Autumn Squash Soup Keto
This soup is low carb when you follow the ingredients in this recipe. That doesn’t mean that all versions are.
Oftentimes, when the soup is made commercially or at Panera it has other ingredients like flour to thicken it.
For this recipe, the net carbs are 9g per serving. While this is right on the edge of Keto, it is still considered low carb.
How Many Calories are in an Autumn Squash Soup from Panera?
This is a very healthy soup. It is low in calories. It comes is at 128 calories. It has about 8 grams of fat in it. Most of that is the healthy fat and only 4 grams of saturated fat.
How Many Weight Watchers Points in This Soup
Panera Autumn Squash Soup comes in at 1 WW point on my personal plan. I use fat free milk when I make it as a WW friendly soup. However, if you want to use full fat milk, then the soup comes in at 2 points per serving.

Ingredients
- butternut squash
- apple
- Spanish onion
- canola oil
- curry powder
- vegetable broth (use chicken broth for keto)
- milk (use Fat free for WW, heavy cream for keto) You can also use Oat Milk but the soup will not taste as rich and creamy.
- pinch of salt
- cinnamon
You will need a food processor. There are crazy expensive ones that are around $140 and even up to $325.
I would never recommend that. This is a great food processor from Hamilton Beach that is much more reasonable or an immersion blender, like this immersion blender.
This is a better immersion blender set. It is an Electric Hand Immersion Blender that has 4-in-1 Hand Mixer, Food Chopper, Beaker, Balloon Whisk, and Stainless Steel Blending Shaft.
It is about double the price of the regular immersion blender but it has a lot of gadgets that are great for the kitchen.
How to Make Panera Autumn Squash Soup
Preheat oven to 425 degrees.
Season the cubed squash with cinnamon and salt. Roast for 30 mins
While the squash is roasting, sauté’ the apple and onion in oil over medium heat.
Season with a few dashes of salt, cooking for about 10 mins or until soft.
Add the roasted veggies.
Use a food processor or immersion blender to blend until soup is smooth and creamy. If using a food processor, add the mixture back to the pot.
Add the curry.
Pour the broth and milk into the squash mixture bringing it to a boil.
Now reduce heat simmering uncovered for 20 mins.
Add more salt (if needed) to taste.
Serve with the toppings of your choice. Enjoy.
