I wish I was the kind of mom who got everything ready the night before – the school lunches, setting out clothes, school papers ready to go. BUT I’m just not. I’m lucky if I get the coffee pot ready to go the night before. I have my priorities! So most days, before school, the house is a bit chaotic. I am trying to get the girls ready for school and on the bus. Then my grandson out the door to daycare. That’s why I love this ham and cheese roll ups which are perfect for Back to School lunches.
Preschool summer school is ending and the new school year is about to start. It’s such an exciting time for my daughter. We headed out to Safeway and picked up the ingredients for the ham and cheese roll ups – only 3 ingredients, so simple.
Ingredients:
6 inch fajita flour tortillas
Shredded cheese
Honey Roasted Ham
Directions:
Making the ham and cheese roll up is super simple. Lay a tortilla out on a plate. You can use larger or smaller flour tortillas, but these 6 inch ones are the perfect size to slice in half for my grandson’s (who’s 4) lunch. Mom and Dad might want 2 or 3 though.
Place a slice of ham on top of the tortilla and sprinkle some shredded cheese on top. Microwave for 15-30 seconds, just until the cheese starts to melt. Roll up the tortilla while it is still warm. BE CAREFUL – it will be HOT.
Slice in half and place in a baggy in their lunch box. You can add some chips and fruit to round out their lunch. You can serve the roll up warm or cold. I would recommend including a lunch box ice pack to keep everything healthy.
