Variations to Keto Friendly Meatloaf
If you want to change this meatloaf you can try:
- Turkey, Pork or Sausage: You can certainly use other ground meat in this meatloaf. Sometimes, using a mixture gives it a new flavor. I like sausage in this recipe a lot.
- Cheese: White I am using cheddar cheese, you can certainly use another cheese if you prefer.
- Flour: This recipe uses coconut flour, but you can change it to almond flour if you prefer.
How to Store Keto Meatloaf with Cheese
I like to make extra of these meatloaf muffins to keep in the refrigerator so I can grab something easy when I am hungry. I have found that is one of my biggest struggles when it comes to staying on track is something to easily grab when I am hungry now or short on time. These Keto Meatloaf with Cheese Muffins are perfect. When storing them in the refrigerator make sure they are wrapped tightly or in an airtight container. You can also freeze them. This is a great way to make sure to have meals on hand. I make extras and freeze them. When the ones in the refrigerator are gone, I just grab some from the freezer.
How to Reheat Keto Muffin Tin Meatloaf
When I am making these ahead of time to reheat later, I usually will microwave them. While I try to not use the microwave often, this is one that I will almost always do in the microwave. Mostly because the point of having these on hand is for a fast and easy meal. However, you can certainly reheat them in the oven.

- Ground beef
- Yellow onion
- Celery stalk
- Eggs
- Coconut flour
- Garlic powder
- Onion powder
- Tomato paste
- Italian seasoning
- Fresh rosemary leaves
- Smoked paprika
- Salt and pepper
- Cheddar cheese
How to Make Meatloaf Muffins with Cheese
Preheat oven to 375°F and spray muffin tin with non-stick cooking spray.
In a large bowl, thoroughly combine all ingredients together with your hands, except for the shredded cheese.
Divide beef mixture into 12 equal-sized portions and place into the prepared muffin tin openings. Place in pre-heated oven for 20-25 minutes, or until the meat is cooked through.
Remove from oven and carefully drain excess moisture off the top of each muffin by gently tipping the tray over your sink. Wipe excess liquid off top of muffin tin and top each muffin with the shredded cheese.
Return to oven for 5 minutes, or until cheese is melted and starts to turn golden brown. Remove from oven and let cool for several minutes before removing muffins from tin. Serve immediately or freeze for later use. Enjoy!
Note: Ground beef can be a bit dry and flavorless on its own. For this recipe, a small amount of finely chopped onion is added to remedy this. As a result, some excess moisture will rise to the top of these meatloaf muffins as they bake. This is normal and easily remedied by carefully draining off the excess moisture before adding the cheese as described in Step 4 below.

- 2 extra virgin olive oil
- 1½ lbs. ground beef 80%
- ¼ c. yellow onion finely chopped
- 1 large celery stalk finely chopped
- 3 large eggs
- 2 coconut flour*
- ½ t. garlic powder
- ½ t. onion powder
- 1 to mato paste
- 2 t. Italian seasoning
- 1 fresh rosemary leaves finely chopped
- ½ t. smoked paprika
- Sea salt and black pepper to taste
- ¾ c. Colby Jack cheese shredded
