We love stuffed peppers in my house. My kids ask for them all the time. The only problem is they can get expensive. Unless I get peppers and hamburger on sale, to feed all the people in our house, it adds quickly. Plus it has a lot of steps. There are nights I want an easy dinner but want stuffed peppers. And this Stuffed Pepper Soup recipe was born. It is budget friendly, easy to make and the kids even love this soup.
This Stuffed pepper soup is easier to make than traditionally stuffed pepper soup. Because with soup, you cook up the hamburger and throw everything them into the pot. Stuffing peppers, while easy, does take a little longer. Plus, load up on the veggies and you can save your budget by using less meat and making the dinner do further.
Can this be a Stuffed Pepper Soup Crockpot Recipe
This recipe is easy to change to a Crock-Pot or Slow Cooker recipe. When I make it in the slow cooker I like to brown the hamburger and put the ingredients in, except the rice. I cook the rice towards the end of the cooking time and add it for the last 30 minutes. This keeps the rice from becoming mush. I get the slow-cooked taste of soup and it is a piece of cake to make it a stuffed pepper soup crockpot version.
How to Store Green Stuffed Pepper Soup
If you have leftovers of this green stuffed pepper soup, you want to store it in the refrigerator. As the soup sits, the rice will continue to absorb the liquid. It might look like there is no broth left, but once you heat it, some of the broth will be released. Make sure to put the soup in an airtight container.

When I am reheating this soup as a single serving, I will usually reheat it bowl by bowl. When I am heating it for dinner for everyone, I tend to put it in a pot and heat it on the stovetop.

Oftentimes, I will freeze it in smaller portion sizes to make a quick and easy lunch or dinner that can be ready in no time. I use freezer bags in order to take up less space in the freezer. Lay the freezer bag flat when freezing and you are able to stack other things on top of the bag. be sure to write what is in it and when it was frozen.

Ingredients in Stuffed Pepper Soup
- Ground Beef or Ground Chicken Breast
- Green bell pepper
- Red Pepper
- Onion
- Diced tomatoes
- Tomato sauce
- Chicken broth
- Dried thyme
- Dried sage
- Salt and pepper
- White rice or Rice Cauliflower
- Fresh sage
How to Make Stuffed Pepper Soup
Prep stockpot with cooking spray.
Add the ground meat in the stockpot.
Brown the meat. Drain the fat.
Add the pepper and onion.
Cook the onion and pepper until the onion is translucent but not brown.
Add the tomatoes, tomato sauce, chicken broth, thyme, and sage. Season with the salt and pepper. (to taste).
Cover the stockpot. Allow the soup to simmer for 30-45 minutes. (Or until the peppers are tender)
Add 2 cups of water in the saucepan. Bring to a boil.
Cook the rice until it is tender.
Add the rice to the soup.
Garnish with the fresh chopped sage.

Equipment
- Large stockpot w/lid
- 1 saucepan
Ingredients
- 1 lb ground beef or ground turkey breast
- 2 green bell pepper chopped
- 1 red bell pepper chopped
- 1 cup onion finely diced
- 29 oz diced tomatoes canned
- 15 oz tomato sauce canned
- 14 oz chicken broth
- 1/4 tsp dried thyme
- 1/4 tsp dried sage
- salt and pepper to taste
- 1 cup white rice or riced cauliflower
- fresh sage chopped
Directions
