    Add the balsamic vinegar and garlic to the pan. Cook for 1 minute.

    Ingredients
      

    • 1 pound boneless chicken breasts
    • 1 tablespoon olive oil
    • ¼ cup balsamic vinegar
    • 2 tablespoons garlic minced
    • 1 pint grape tomatoes halved
    • 2 tablespoons fresh basil
    • 4 slices mozzarella cheese
    • 1 teaspoon salt and pepper

    Directions
     

    • Heat the olive oil on medium high heat in a large skillet. Season chicken with salt and pepper. Add chicken to the pan and cook for 4-5 minutes, or until golden brown. Turn over and repeat. Remove the chicken, place it on a bowl and set it aside.
    • Add the balsamic vinegar and garlic to the pan. Cook for 1 minute.
    • Stir in the basil.
    • Add the tomatoes and cook for 5-7 minutes or until soft.
    • Return the chicken to the skillet. Place the mozzarella slices on top of the chicken. Cover until the cheese melts.
