    Mint Chocolate Cheesecake Brownies

    Mint and Chocolate go hand in hand. These chocolate mint brownies are a perfect treat. With mint swirls through the brownies, create these delicious brownies as St. Patrick’s Day Brownies.

    Chocolate and mints remind me of Andes candy. I love those candies. The first time I had chocolate mint brownies, I knew these would be an addition to our family favorites. When these are cheesecake brownies, it becomes the best chocolate mint brownies you will ever eat.

    Mint Brownies

    I am not sure how mint became popular for St. Patrick’s Day. Maybe because mint is green and most mint foods are green. I am don’t know, but I do know that many St. Patrick’s Day foods are green and flavored mint. That is why I say these mint brownies are perfect for St. Patrick’s Day. Delicious mint brownies swirled with cheesecake are going to be a new favorite. This mint brownie recipe is not just for St. Patrick’s day but anytime.

    Cheesecake Brownies

    The idea of cheesecake brownies is the cheesecake is combined with the brownie. The mint cheesecake is swirled with the chocolate brownie and it is like heaven in a bite. Mint brownie cheesecake bars are perfect for St. Patrick’s Day or anytime you want a delicious treat.

    Brownie Cheesecake Recipe

    If you want to change up this brownie cheesecake recipe, you can take away the mint and the green food coloring. If you are not a fan of food coloring in your food, you can still make this brownie cheesecake recipe mint tasting without the green color.

    Mint Chocolate Swirl Brownies

    Ingredients:

    Brownie Ingredients:
    1 box fudge brownie mix (20 oz)
    2 large eggs (room temp)
    1⁄2 C vegetable oil
    1⁄4 C water

    Mint Cheesecake Swirl Ingredients:
    1 block cream cheese (8 oz. /softened)
    1/4 C sugar
    1 large egg yolk
    1/4 tsp mint extract (not peppermint)
    4-5 drops green food coloring (dark green)
    2/3 C mini chocolate chips, mint chips or Andes candies chopped (We use all of them)

    Directions:
    Preheat oven to 350 degrees.
    Line a 9×13 inch baking pan with parchment paper. (leave an overhang on all sides.)
    Set aside.

    Brownie directions:
    Beat together the brownie mix, eggs, oil, and water.
    Continue to mix until smooth.
    Take out 1⁄3 cup of the batter.
    Set it aside.
    Pour the remaining of the batter into prepped pan.

    Cheesecake Swirl directions:
    Beat the softened cream cheese, sugar, egg yolk, mint extract, and food coloring in a medium bowl with an electric mixer until the mixture is completely smooth. (about 1 minute). 
    Add the mini chocolate chips, stir in by hand.

    Measure out large spoonfuls of the cream cheese mixture.
    Dollop the spoonfuls on top of the prepared brownie batter. Next, add the dollops of rest of the brownie batter to the top of the brownie batter.
    Using a knife create a swirl effect to mix the cream cheese mixture and the additional brownie batter.

    Sprinkle additional mini chocolate chips on top.
    Bake brownies at 350 degrees for 35-40 minutes. (Or until a toothpick comes out almost clean)
    Remove from the oven.
    Set aside until they have cooled.
    Cut them into squares.
