    The Best Cheesy Broccoli Cornbread Recipe

    I love cornbread. I might be able to eat it with every meal. This recipe is a twist on a traditional recipe with the addition of broccoli and cheese. It’s perfect for any meal, especially brunch! It goes well as a side dish to many other recipes.

    What is Cornmeal?

    A lot of people do not know what cornmeal is. It is a coarse ground meal of dried corn, typically made from yellow or white varieties. When using the mix, it has all the dry ingredients you need to make the recipe.  

    What is the ideal texture?

    The ideal texture is a nice, even crumb. The top should be golden brown and crispy while the inside is moist but not too dense. It should have a buttery and rich flavor with just the right amount of sweetness.

    How to Store

    Broccoli Cheese cornbread can be stored in an airtight container and will last for up to five days. If you think that you will not finish the cornbread before it goes bad, you can also freeze the cornbread.

    Can You Freeze Cornbread?

    You can freeze cornbread. It will last in the freezer for up to three months. Cornbread should be wrapped tightly with aluminum foil before freezing so that it does not pick up any flavors from other foods in the freezer or refrigerator.

    What is the Best Way to Thaw Cornbread

    The best way to thaw a frozen loaf is to leave it on the counter for a few hours. If you like that firm crispy top, then toast in an oven or toaster until it gets the crispy top.

    Why is My Cornbread Crumbly?

    Since you are using a mix with this recipe, if it is too crumbly, it is usually because the it is overbaked. The cheese in this recipe should keep that from happening.

    Toppings and Add Ins

    There are many things you can add to the top or inside this broccoli cheese cornbread. You can add some butter to the top or use a cinnamon butter. You can also add a touch of honey to the top. Some other ideas are to add

    • Maple Cream, Jelly, Jam or Blueberry Compote over the top
    • Ham, cooked sausage, or ground beef inside
    • Diced Chiles, diced tomatoes or Rotel, or roasted corn kernels

    What Should I Serve With Cornbread?

    Of course, when it comes to cornbread, the first thing everyone thinks of is chili. We have several chili recipes that would go perfectly with Vegetarian Chili Recipe, Easy White Chicken Chili in the Slow Cooker, and Slow Cooker Pulled Pork Chili. It goes amazing with Green Chile Chicken Casserole.

    Some of the options to serve with this cornbread are Marinated Chicken Breast, Beef Rice Soup, Grilled Pork Chops and Herbed Mustard Beef Sirloin Steak.

    What kind of baking dish should I use?

    I am using a 9*13 inch pan. You can also make this recipe in a 9 inch baking pan or in a 9 inch cast iron skillet. This will be a longer cooking time because the pan is thicker. If you want to make these into muffins, you can bake them in a muffin pan for about 15 minutes.

    • Cottage cheese
    • Butter
    • Eggs
    • Cornbread mix
    • Frozen chopped broccoli
    • Onion
    • Shredded cheddar cheese

    How to Make Jalapeno Cheese Cornbread

    Preheat the oven to 375 degrees. Prepare a 9×13 casserole dish with nonstick cooking spray.

    In a large bowl, mix together the cottage cheese, butter, eggs, cornbread mix until well blended.

    Stir in the mix. Then, add the broccoli, onion, and 1 ½ cup cheese.

    Spread the batter in the prepared casserole dish.

    Top with the remaining cheese.

    Bake for 35 to 40 minutes or until it is puffed and golden.

    Remove from the oven and cool slightly before slicing and serving.

    Ingredients
      

    • 1 cup cottage cheese
    • ¾ cup butter melted
    • 4 eggs lightly beaten
    • 2 boxes 8.5 ounce cornbread mix
    • 10 ounces frozen chopped broccoli, thawed and drained
    • 1 onion chopped fine
    • 2 cups shredded cheddar cheese divided

    Directions
     

    • Preheat the oven to 375 degrees. Prepare a 9×13 casserole dish with nonstick cooking spray.
    • In a large bowl, mix together the cottage cheese, butter, eggs, cornbread mix until well blended.
    • Stir in the cornbread mix. Then, add the broccoli, onion, and 1 ½ cup cheese.
    • Spread the batter in the prepared casserole dish and top with the remaining cheese.
    • Bake for 35 to 40 minutes or until the cornbread is puffed and golden.
    • Remove from the oven and cool slightly before slicing and serving.
