They are so easy to make and because they are cookies, they are a perfectly portable treat. You can eat these cookies plain or add some cream cheese frosting to them. Why Make Carrot Cake Cake Mix Cookies
Making cookies using a cake mix makes it so easy to make cookies. All the dry ingredients are together in the cake mix. That means, you only have to add the oil and the eggs. One of the biggest complaints I hear about making carrot cake cookies and carrot cake in general is that they hate shredding the carrots. It is a pain and it can take a while. By using the cake mix, not only can you skip grating carrots, you also don’t have to measure out all the spices. These cookies come together in no time.
Cake mix cookies are some of my favorites. I started making 3 ingredient cake mix cookies and then I started branch out from there. Next came these carrot cake cookies, then I tried Lemon Cake Mix Cookies, Easy Cake Mix Peanut Butter Cookies and then Oatmeal Cake Mix Cookies, Funfetti Cake Mix Cookies, Unicorn Cake Mix Cookies and Funfetti Cake Mix Cookies. I even make Rolo Cookies with cake mix. Now I can not count how many cake mix cookies I have tried.
Should I add raisins to carrot cake cookies?
This is a personal choice. I prefer to not add raisins to my carrot cake, so I also do not add them to my cookies. I know a lot of people who prefer them so you can certainly add the raisins to the cookies. You can also add walnuts, which is something that a lot of people like in their cookies too. Add about 1/4 to 1/2 cup to the cookie dough, depending on preference.

I have never seen a sugar free carrot cake cake mix, so I am not sure if there is a way to make these cookies sugar free, which is one of the easiest ways to make these cookies Weight Watchers friendly. You can swap the oil for applesauce which will help bring the fat and calories down in the cookies, which will lower the point count.

How to Store Carrot Cake Cookies
These cake mix carrot cake cookies can be stored at room temperature. If you add cream cheese frosting to the cookies, you will need to store them in the refrigerator. That is because cream cheese frosting can not be left at room temperature for much time without spoiling.
Can Cake Mix Carrot Cake Cookies Be Frozen
You can freeze these cookies with or without the cream cheese frosting. I always like to freeze my cookies before moving them to the freezer bag or air tight container because it keep the cookies from sticking together. I place the cookies on a cookie sheet or a plate and place it in the freezer. After about an hour, I take the cookies out and place them in the freezer bag or container. However, if the cookies are made into sandwich cookies, I like to wrap each on on plastic wrap first.
To thaw the cookies move them to the refrigerator, if they have cream cheese frosting or the counter if they do not. The cookies will be ready to eat in a few hours to the next day.
Is Carrot Cake the same as Spice Cake
So basically carrot cake is the ultimate spice cake that also has grated carrots in it. It has all the same flavors and spices in it.
Tips for Making These Cookies
Do not underbake the cookies. I love underbaked cookies but honestly, I do not think that these cookies taste as good when they are underbaked.
Let them Rest. The cookies are soft baked so they are very soft until they have cooled. If you pick them up before they have cooled, the cookies have a tendency to break.
Let the cookies cool before frosting. If you add the frosting before the cookies are cooled, the frosting will melt.

How to Make Cake Mix Carrot Cake Cookies
Combine all the ingredients together in a bowl.
If adding raisins or nuts, fold them in next.
Scoop the cookies using an ice cream scoop, size 50
Bake cookies on an ungreased cookie sheet.
Frost cookies, make into sandwich cookies or enjoy plain.
