Pork chops are one of my favorite types of meat and I have found that when I make pork loin, it is a much lighter version and it is cheaper too.

How to Store Pork Loin
When you make this easy pork loin you want to make sure to store it in the refrigerator. You can also freeze the cooked pork tenderloin as well. Once the orange glazed pork has cooled, move it to an airtight container. You can also store the pork in a freezer bag. If you choose to freeze the pork loin I recommend freezing it wrapped well in plastic and then inside of a freezer bag. I like to freeze it in individual sized serving sized so that I can take out a serving at a time in order so that I do not have to worry about taking out more than we can eat at a time.

How do I Keep Pork Loin From Being Too Dry?
When you are making this Pork loin, you want to make sure it doesn’t get too dry. You want to baste the pork loin every 10 minutes with the orange glaze to keep the pork loin from being too dry.
How Long Does Pork in the Oven Last
When you have stored the pork properly in an airtight container and in the refrigerator it will last about 5 days. If you will not be able to finish the orange glazed pork tenderloin before it goes bad, you will want to move the tenderloin to the freezer.

Can This Pork Loin Be Made in the Slow Cooker
If you want to make this pork tenderloin recipe in the crock pot instead of roasting it in the oven you can certainly do so. This recipe for pork tenderloin results in melt in your mouth tender pork even when roasted in the oven, but when it is made in the crock pot it will be incredibly tender. Add the glaze directly over the pork when you place it in the slow cooker and be sure to baste it a few times while cooking. The cooking time in the slow cooker will be around 8 hours on low.
Ingredients
- Extra virgin olive oil
- Orange
- Honey
- Whole-grain mustard
- Salt and black pepper
- Red beet
- Tri-color carrots

How to Cook Pork Loin in the Oven
Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
Whisk together 1/2 tablespoon of olive oil, orange zest, orange juice, honey, mustard, salt, and pepper.
Rub the mixture over the piece of meat and make sure to coat it on all sides. Place the pork in the center of the baking sheet pan and set it aside.
Toss the vegetables with the remaining olive oil, thyme leaves, salt, and black pepper, to taste, and spread them around the pork tenderloin in a single layer being sure not to overcrowd the vegetables.
Place the pork and vegetables in the pre-heated oven and roast for 25-30 minutes, or until the pork reaches an internal temperature just above 140°F* on a meat thermometer and the veggies are fork tender. Brush the pork with the remaining orange glaze every 10 to 15 minutes as it roasts.
Remove the baking sheet from the oven and loosely cover the roast with aluminum foil. Allow the meat to rest for 5-10 minutes, up to 20 minutes, before serving. Enjoy.

Orange-Glazed Pork Loin with Roasted Root Vegetables
Ingredients
- 1 T. extra virgin olive oil divided
- 2 t. orange zest preferably organic
- 3 T. fresh orange juice
- 1 T. honey preferably local
- 1½ T. whole-grain mustard
- Sea salt and black pepper to taste
- 1½ lbs. boneless pork tenderloin roast
- 1 large red beet peeled and sliced
- 1 12- oz. bag tri-color carrots
- 1 medium red onion sliced
- 2 T. fresh thyme leaves + additional sprigs for garnish
Directions
- To make this pork tenderloin recipe, place top oven rack in the center position and pre-heat oven to 400°F. Line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat and set aside.
- Whisk 1/2 tablespoon olive oil with the orange zest, orange juice, honey, and mustard. Season with salt and black pepper, to taste, and stir to combine.
- Rub the orange glaze all over the pork loin, making sure to coat it on all sides. Place the meat in the center of the prepared sheet pan and set aside.
- Toss the beets, carrots, and red onion with the remaining olive oil and thyme leaves. Season with salt and black pepper, to taste, and spread the seasoned veggies around the pork tenderloin in a uniform layer without overcrowding.
- Place the sheet pan in the pre-heated oven and roast for 25-30 minutes, or until the pork reaches an internal temperature just above 140°F* and the veggies are fork tender. The cook time will vary slightly depending on the size of the piece of meat.
- *Note: 145°F is the recommended minimum safe cooking temperature for pork tenderloin – the internal temperature will rise several degrees while it rests. The meat may be a little pink at this temperature.
- Remove from oven and loosely cover the roast with aluminum foil. Allow the meat to rest for 5-10 minutes before serving the perfect pork chops. Enjoy!
