It’s the perfect coating for chicken and broccoli. This dish is best served over a bed of cooked pasta, but it’s also delicious on its own. Chicken Alfredo with broccoli is made with a creamy Alfredo sauce, while chicken fettuccine is made with a tomato-based sauce. Other than that, the two dishes are pretty similar. They both usually contain chicken, broccoli, and pasta.

    What is the Difference Between White Sauce vs Alfredo Sauce

    A classic Alfredo sauce is made with butter, garlic, heavy cream, and Parmesan cheese. A white sauce is typically made with a roux of flour and butter, and then milk is added to create a thick and creamy consistency.     What cheese to use in Broccoli Chicken Alfredo Sauce?

    I am making my alfredo sauce using parmesan cheese. That is the only cheese I use. However, I have seen other recipes using a variety of different cheeses. So, if you want to experiment, go for it! I think that mozzarella or cheddar cheese would be delicious in this sauce. Another idea is to use mozzarella cheese and Monterey Jack cheese.

    Why did my Alfredo sauce curdle?

    If your Alfredo sauce is starting to curdle, it’s because the fat in the sauce is separating from the liquid. This can happen if the sauce is too hot or if it’s been sitting for a while. If your sauce starts to curdle, just whisk it vigorously until the clumps disappear.

    How do I thicken my Alfredo sauce?

    But there are a lot of other things that you can serve it with. You can skip some of the carbs and serve it over butternut squash noodles. If you don’t want to serve this as a classic meal, one idea is to use it as a dipping sauce for breadsticks or garlic bread. When I serve it like this, I cut the chicken and broccoli very small or I leave them out and just make the alfredo sauce.

    You can skip the chicken and add other vegetables or even serve it with fish.

    You could even use it as a pizza sauce!

    Can I use other cuts of chicken for chicken and broccoli alfredo?

    Absolutely. I am using rotisserie chicken because this is my go-to recipe when I want dinner on the table fast. Those precooked chickens are a lifesaver when you want something fast and easy that is also healthy. Many people use chicken breast when making classic broccoli chicken alfredo. You can also use cooked chicken thighs. Shred the chicken thighs and add it just like the rotisserie chicken.

    Variations to Broccoli Chicken Alfredo

    Add a pinch of nutmeg. Only the smallest amount since nutmeg has a strong flavor. It brings out a delicious twist on this alfredo recipe.

    Saute some mushrooms along with the onions and garlic.

    Add a can of drained and rinsed white beans for extra protein, fiber, and creaminess.

    Stir in a cup or so of frozen peas during the last few minutes of cooking.

    Make it spicy by adding a pinch or two of crushed red pepper flakes or a diced jalapeno pepper.

    Add a tablespoon or two of freshly chopped parsley or basil for a fresh flavor. 

    Can I make this broccoli chicken alfredo recipe low carb?

    Yes, you can definitely make this broccoli chicken alfredo recipe low carb. Just skip the pasta and serve it over cauliflower rice or zucchini noodles. You could also use spiralized carrots or turnip noodles. If you want a lower-carb sauce, you can use heavy cream instead of half and half.

    Can I make this broccoli chicken alfredo gluten free?

    Yes, you can make this broccoli chicken alfredo gluten-free. Just make sure that you use gluten-free pasta and gluten-free flour (or cornstarch). I like to use brown rice pasta and either tapioca flour or cornstarch. You could also make this broccoli chicken alfredo paleo by skipping the pasta and serving it over cauliflower rice or zucchini noodles.

    Is Alfredo Weight Watchers Friendly

    This recipe for broccoli chicken alfredo is not Weight Watchers friendly. That ie because I am not limiting the fat in the ingredients that I am choosing. If you want to make this recipe come in at low points, I recommend you use my Weight Watchers Alfredo sauce. It tastes great, but it is not as decadent as this recipe. As a side for WW Chicken Alfredo, I would definitely add 2 ingredient breadsticks.

    How to store and reheat alfredo sauce

    Leftover alfredo sauce can be stored in the fridge for 5 days or in the freezer for 2-3 months. When you are ready to eat it, let it thaw in the fridge overnight. Then, reheat it on the stove over low heat until warmed through. You may need to add a little bit of milk or cream to thin it out since it will thicken as it cools.

    If you want to reheat alfredo sauce that is still frozen, you can do that too. Just place it in a saucepan over low heat and cook until warmed through. Again, you may need to add a little bit of milk or cream to thin it out.

    Tips to make the perfect Chicken Alfredo

    Tip #1: Prepare the fettuccine according to package directions while making the sauce so the noodles are still warm when ready to toss with the other ingredients. 

    Tip #2: To prevent curdling, remove half & half from the refrigerator when starting this recipe to give it a chance to reach room temperature before adding to the hot saucepan.

    • Frozen broccoli florets
    • Water
    • Butter
    • Garlic
    • Cream cheese
    • Half & half
    • Chicken broth

    • Additional freshly grated Parmesan cheese, to serve

    How to Make Broccoli Chicken Alfredo

    Prepare broccoli by placing florets in a microwave-safe bowl with 2 tablespoons of water. Microwave on high until crisp-tender. Cooking time will vary depending on individual microwave ovens, so test after 2 minutes and adjust cooking times accordingly. When finished, drain to remove excess water. Set aside.

    Add butter and garlic to a large saucepan and set heat to medium. Sauté garlic for 1-2 minutes before adding cream cheese, half & half, and chicken broth. Continue cooking while stirring constantly until cream cheese is completely melted.

    Reduce heat to low and continue stirring for about 15 minutes or until sauce thickens. Remove from heat and stir in freshly grated Parmesan cheese. Season with salt and black pepper, to taste.

    Add rotisserie chicken, steamed broccoli, and cooked fettuccine noodles to a large serving bowl. Pour the sauce on top and gently toss until thoroughly combined. Top with chopped parsley and freshly grated Parmesan cheese and serve immediately. Enjoy!
