    Easy Nest Eggs Recipe

    Cloud eggs may look like a Pinterest fail, but they are actually one of the easiest (and prettiest) ways to make eggs. Cloud Eggs, also known as Nest Eggs or an Egg Volcano Recipe, is a simple yet delicious recipe that is perfect for any occasion. The ingredients are basic and easy to find, making this a go-to dish when you need something quick and satisfying. Whether you’re serving them up for breakfast, lunch, or dinner, Cloud Eggs will definitely brighten up your day!

    The result is a fluffy, golden-brown cloud of goodness that’s perfect for breakfast or brunch.

    What are Cloud Eggs? 

    Cloud Eggs are a French dish made with beaten eggs. It’s a type of egg dish that is made by whipping egg whites into fluffy clouds, then baking them until they are set. The result is a dish that is light and fluffy, almost like a soufflé. Once the pillow eggs are set, they are filled with a yolk mixture and then baked again for a few minutes. The final result is a beautiful and Instagram-worthy breakfast that is both pleasantly light and satisfyingly filling. 

    Are These Like Bird in the Nest

    Bird in the Nest, also called egg in the hole or egg under the bed, is a different style of dish. That is bread which has a hole cut out of it and then the egg is cooked inside. This results in a grilled toast and baked egg that is similar to a fried egg sandwich. While very tasty, bird in the nest toast is not like eggs in the clouds.

    Are Eggs on a Cloud Good?

    Um, YES. how could they not be. This egg volcano recipe creates the airy eggs and makes it like a soufflé. It is airy and fluffy and silky all at once. Then the egg yolk taste rich from being baked. Then with all of that, the egg is made with asiago cheese, and it doesn’t get any better than that.

    What Can I Add to Cloud Eggs

    There are endless possibilities when it comes to adding ingredients to Cloud Eggs. When you are adding in other things, make sure they are cooked or sautéed first. Some of our favorite add-ins include: 

    • Bacon
    • Sausage
    • Ham
    • Cheese
    • Green onions
    • Red peppers
    • Spinach
    • caramelized onions
    • mushrooms

    When adding in these things, remember that the cloud part of the egg in the clouds is small. Do not overload it or you will ruin the airy egg texture. Add a small amount of your favorite add ins and then enjoy the rest of it on the side.

    Can I use Other Herbs

    I am using chives to season the egg clouds egg white mixture but you can absolutely use other herbs. Some of our favorites variations include: 

    • Dill
    • Parsley
    • Basil
    • Cilantro
    • Rosemary
    • Thyme

    What to Serve with this Egg Volcano Recipe?

    Cloud eggs are generally served as a breakfast or brunch dish. However, they can also be served as a light lunch or dinner. If you’re looking for something to serve with Cloud Eggs, some of our favorite side dishes include: 

    • Fresh fruit or a healthy berry smoothie
    • Almond granola with homemade Greek yogurt
    • Toast, sheet pan pancakes, waffles or french toast
    • Fried breakfast potatoes or cheesy crash hot potatoes
    • Sausage
    • Bacon

    If you are serving these cloud eggs for brunch, you can serve it with a Bloody Mary.

    Don’t Like Runny Eggs?

    If you prefer that your egg yolks are more done, you can add the yolks to the egg pillows sooner, even from the start to have fully cooked eggs, similar to overhard. This will cook the egg yolks more, without overbaking the eggcloud.

    Can I make Cloud Eggs ahead of time?

    I love a breakfast that I can make ahead and then egg throughout the week or even just later in the day. However, these airy eggs are not one of those recipes. Cloud eggs should be eaten right away. Because of the eggcloud, this recipe doesn’t hold up well once it starts to cool to room temperature. I recommend eating the eggs in the cloud straight away.

    If you want to save time making this recipe, you can separate the eggs ahead of time and cook any additional add ins that you plan to use. This way you can save a few steps. When you are ready to make the cloud eggs, you will whip the eggs and bake.

    Tips and Tricks

    Making cloud eggs is pretty easy, but here are a few tips and tricks to make sure they turn out perfectly every time: 

    Use fresh eggs. Older eggs will not whip up as well and you will not get the same light and fluffy texture.

    Make sure there is no yolk in the egg whites. Any yolk will prevent the whites from whipping up properly.

    Do not overmix the egg whites. You want to mix just until they are stiff peaks. If you mix too much, the egg whites will deflate and your eggs will not be as light and fluffy.

    When adding the cheese and chives into the egg whites, it is important to fold. Folding is a gentle stirring motion that helps to keep the air in the egg whites. If you stir too much, you will deflate the egg whites and they will not be as light and fluffy.

    Use a piping bag or Ziploc bag with the corner snipped off to pipe the egg whites onto the baking sheet, if you want to give that round pillows of egg whites.

    Bake the eggs until they are set and just barely starting to brown. If you overcook them, the yolks will be dry.

    Use a rubber spatula to carefully release the egg from the baking sheet. These are delicate until they are cooked all the way through. Parchment paper and cooking spray are also vital in getting the eggs to release from the baking pan easily.

    How Many Weight Watchers Points in Cloud Eggs

    So, typically for a lot of Personal Point plans, eggs are free. The eggs are 0 points on my plan for this recipe but it is the cheese that gets me. With this recipe, as written, it comes in at 3 points per cloud egg. You can reduce the amount of cheese, use a lower point cheese like a low fat parmesan cheese. While 3 points for an egg might seem like it is not going to be worth it, this recipe is worth every single point.

    How to Make Cloud Eggs 

    Making Cloud Eggs is actually quite simple, and only requires a few ingredients that you probably already have in your kitchen. All you need are eggs, cheese, salt, pepper and chives. First, separate egg whites from the yolks, placing the egg whites in a large bowl. Set the yolks aside for later in individual small bowls; we’ll be using them in just a bit. Next, use an electric mixer to beat the egg whites until stiff peaks form. Once the egg whites have reached stiff peaks, fold in the cheese until it is evenly distributed. Season the mixture with salt and pepper to taste. 

    Now it’s time to start shaping our clouds! Use a spoon or piping bag to make mounds of the mixture onto a baking sheet lined with parchment paper. Make sure to leave some space between each dollop; the mixture will puff up as it cooks. Using the back of a spoon, make a small indent for the egg yolk to be added later. Pop the baking sheet into an oven preheated to 400 degrees Fahrenheit and bake for 3-4 minutes, or until golden brown. Remove from oven.

    Add the reserved yolks into the indent of each mount. Sprinkle each mound with half of the remaining cheese and fresh chives and return to oven and bake another 3 minutes or until yolks are set and egg whites are golden brown.

    Ingredients
      

    • 4 large eggs
    • 2 oz. Asiago cheese finely grated, divided
    • 3 Tbsp fresh chives finely chopped, divided
    • Salt and black pepper to taste

    Directions
     

    • Position oven rack to center position. Preheat oven to 450°F and line a large, rimmed baking sheet with parchment paper and set aside.
    • Crack and separate eggs, placing the whites in a large mixing bowl and reserving the yolks in another bowl.* Season egg whites with salt and pepper, to taste.
    • Using a hand mixer or immersion blender, beat the egg whites until stiff peaks form. Scrape the sides of the bowl with a spatula while blending to incorporate all of the egg white.
    • Gently fold in 2/3 of the Asiago cheese and chives into the bowl, being careful not to deflate the egg whites in the process. Spoon the whipped egg white mixture onto the prepared baking sheet into four piles, leaving plenty of room between each mound. With the back of a spoon, create an indent in the center of each mound and place baking sheet on center rack in preheated oven and bake for 3 minutes.
    • After 3 minutes, remove from oven and transfer reserved yolks into the indent of each mount. Sprinkle each mound with half of the remaining cheese and fresh chives and return to oven and bake another 3 minutes or until yolks are set and egg whites are golden brown.
    • Remove egg clouds from oven and sprinkle with remaining cheese and chives and serve immediately.

    Notes

    *For best results, reserve the egg yolks in small, individual dishes rather than in one larger bowl.
